TOFU WITH OLIVES TAJINE
Preparation time :15 minutes
Cooking time : 2 hours
INGREDIENTS
2 packets of tofu
1 tin peeled tomatoes
3 turnips, cut into cubes
700 g potatoes, cut into cubes
2 carrots, chopped into cubes
1 onion, chopped
1 bunch parsley, chopped, Spices
½ tsp powdered cumin,
1 garlic clove, chopped
70 g of green or black olives
100 ml vegetable stock
2 tbsp olive oil
Salt and pepper
METHOD
Chop the tofu into cubes and soak in warm water until a little firmer. Lightly fry the onions in the
Tajine with the oil, add all remaining ingredients, cover and cook for 2 hours using the simmer
function. Serve with couscous or rice.
SEASONAL VEGETARIAN TAJINE

300 g zucchini (peeled)
1 sweet potato
300 g runner beans
70 g black olives (optional)
70 g almonds
400 g tomatoes (fresh or tinned)
2 Bell Peppers, seeded
1 garlic clove, chopped
1 tsp saffron
1 tbsp coriander, finely chopped
3 tbsp olive oil
1 cinnamon stick
½ lemon, finely sliced
