BEEF BOURGUIGNON

INGREDIENTS
1 kg chuck steak, cut into 3cm cubes
seasoned flour to coat
2 tbsp oil
200 g bacon, chopped
30 g butter
150 g diced onions
3 garlic cloves, finely chopped
1 leek sliced
250 g button mushrooms
2 carrots, diced
3 tbsp tomato paste
500 ml red wine
500 ml beef stock
2 tsp thyme, chopped fresh
2 bay leaves
4 tbsp flat leaf parsley, finely chopped fresh
METHOD
Toss the meat in the flour to coat, then shake of excess, heat the oil in the Tajine and brown the
bacon. Remove from the Tajine. Add the beef and brown in small batches, remove from the pan.
Melt the butter in the Tajine. Add the onions, garlic and leek and cook for 4-5 minutes. Return
the beef and bacon to the Tajine and add the remaining ingredients, except the parsley and stir
well. Cook with lid on for 3 hours using the simmer function, if the sauce needs to thicken, cook
for a further 30 minutes with the lid off. Remove the bay leaves and stir in the parsley. Serve
with mashed potatoes.
