ASIAN FLAVOURED BEEF STEW
Preparation time: 25 minutes

INGREDIENTS
1 kg chuck steak cut into 3cm cubes
2 tbsp olive oil
1 large red onion, thickly sliced
3 cloves garlic, crushed
3 tbsp tomato paste
250 ml red wine
500 ml beef stock
2 bay leaves, crushed
3 x 1.5cm strips orange zest
1 star anise
1 tsp Sichuan peppercorns
1 tsp thyme, chopped fresh
1 tbsp rosemary, chopped fresh
3 tbsp coriander leaves, chopped fresh
METHOD
Heat 1 tablespoon of oil in the Tajine, add the beef and brown in batches, then remove. Heat
the remaining oil and add the onion and garlic and sauté for 2-3 minutes. Add the tomato paste
then stir in the wine and cook for 2 minutes. Return the meat to the Tajine and add the stock,
bay leaves, orange zest, star anise, peppercorns, thyme and rosemary. Cook with the lid on for 3
hours using the simmer function, remove the bay leaves and zest, then stir in 2½ tablespoons of
coriander and garnish with the remainder. Serve with rice.

1 garlic clove, chopped
1 bunch coriander, chopped
½ tsp tumeric
