6.5.3 DEAERATION PROGRAMS
This function, designed for vacuum cooking, is aimed at maximum air extraction from the core of the product and can
be performed inside a bag, using the vertical tray, or inside a container. It consists of a sequence of stages of vacuum
alternated with phases of partial discharge.
There are 9 deaeration programs, during each of which it is possible to program sealing.
• Deaeration of SOLID products.
• Deaeration of THICK SAUCES.
• Deaeration of MEAT SAUCES.
• Deaeration of MARINADES.
• Deaeration of SWEET PREPARATION CREAM BASES.
• Light deaeration of ICE CREAM BASES MIN.
• Medium deaeration of ICE CREAM BASES MED.
• High deaeration of ICE CREAM BASES MAX.
• Very high deaeration of ICE CREAM BASES TOP.

6.5.4 PROGRAMS fOR CONTAINERS

These programs allow a wider and facilitated use of the vacuum containers:
• Program for NON-STOP containers: the cycle is interrupted at the operator's discretion.
• Programme for SENSOR containers: the operator programs a pre-set vacuum time.
• Program for vacuum containers MINIMUM (20 mbar of residual pressure in the container).
• Program for vacuum containers MEDIUM (10 millibar of residual pressure in the container).
• Program for vacuum containers MAXIMUM (4 millibars residual pressure in the container).
• Program for vacuum containers EXTREME (1 millibar of residual pressure in the container).
• Program for DEGAS containers, for deaeration of liquid products in containers.

6.5.5 PUMP OIl DEhUMIDIfICATION CyClE

It may be that products are packaged at inappropriate temperatures, greater than 3°C and in any case such as to also aspi-
rate – together with air – a considerable part of moisture (i.e. water vapour) contained in them. The steam that condenses
when the machine is cold causes oxidation of the internal surfaces of the pump. To prevent this damaging phenomenon, it
is advisable to perform a weekly oil dehumidification cycle which allows the draining of liquids extracted by the pump oil.
This action does not remove the necessary precaution of always packing the product cold, possibly at 3-4° C, also to
reduce bacterial proliferation.
If use of machine is infrequent, it is advisable to carry out a periodic oil dehumidification cycle.
