5.2.2 PROTECTING PRODUCTS ThAT ARE EASIly CRUShED: ThE GAS fUNCTION

This is an important function, which allows delicate and compression-sensitive products to be packaged, preventing them
from being crushed due to a difference in pressure. This difference in pressure is compensated for by replacing the air
with a controlled mixture of non-oxidising food gases. Furthermore, longer preservation times can be achieved by using
appropriate gas mixtures. Please contact the distribution companies for the gas mixture selection, who offer a vast range
of specific mixtures for the type of product, besides providing the pressure adjustment equipment.
The maximum gas percentage allowed is 70%. The pressure exerted by the sealing bar will be insufficient if this threshold
is exceeded and the seal of the bags will be weak.

5.2.3 SEAlING ThE bAGS hERMETICAlly:
ThE SEAlING fUNCTION
Once the vacuum has been created and the gas injected (if
applicable), the hermetic sealing process of the bags is activa-
ted via one or more sealing bars. The sealing bar
against the counterpart bar
parallel resistances is activated simultaneously. Upon com-
pletion, the bar descends and the chamber is decompressed.
The sealing duration varies according to the thickness of the
bags, the ambient room and the amount of work to be carried
out. In any case, the double sealing line on the bag must be
uniform, well defined and with no melting points.
The indicative basic value is 3,5 seconds per bag having a
thickness of 90 micron. The sealing bar will overheat if the work
to be carried out is particularly intense so it may be appropriate
to reduce the duration after about two operating hours.
If very thick bags are used or bags made of particular material
(aluminium coupled films), the Cuisson 61 model is fitted
with with a compressed air connection (nr. 18 - page 21) that
allows the pressure exerted on the sealing bar to be increased.
