STARTING AND STOPPING THE
COOKING CYCLE
To complete this operation, proceed as follows.
Starting
1. Switch on the appliance (see: Switching the
Appliance ON and OFF).
2. Press one of the buttons (1-2-3) to set Cooking
Mode.
3. Press button (4) and turn knob (21) to set
Cooking Temperature.
4. Press button (5) and turn knob (21) to set Cooking
Time, or press button (10) and turn knob (21)
to set "Product Core Probe" or "Vacuum Probe"
temperature.
When cooking in mixed mode, press button (6)
and turn knob (21) to set Percentage of Humidity.
When cooking in convection mode, press button
(6) and turn knob (21) to set the Vent Closing
Percentage.
5. Press button (16) to start Cooking Mode.
During the cooking cycle it is possible to amend
one or more previously set parameters:
•
Amend Cooking Mode (Convection, Steam,
Mixed)
•
Amend the Chamber Temperature.
•
Amend the Cooking Cycle (in time or at core).
•
Amend the Humidity %.
Stopping
The Cooking Cycle stops automatically at the end
of the set time or when the "Product Core Probe"
detects the set temperature.
At the end of the Cooking Cycle a beeper sounds.
•
Press button (16) or open the door to
interrupt the Cooking Mode at any moment.

PROLONGED DOWNTIMES OF THE
APPLIANCE
If the appliance is to be out of use for an extended
period, proceed as follows.
1. Turn off gas supply valve.
2. Turn off water supply valve.
3. Cut off mains power supply using the appliance's
master switch.
4. Clean the appliance and surrounding areas
thoroughly.
5. Spread a fi lm of edible oil over all stainless steel
surfaces.
6. Perform all Maintenance Procedures.
7. Cover the appliance and leave a few gaps to
allow air to circulate.
