Removing pressure from the cooker and opening the lid
WARNING!
Never use force to open the pressure cooker. If the cooker is still under pressure when opening the lid,
you could burn yourself severely.
NOTE:
If the cooker is without pressure, the locking device (9) can be moved easily.
Gently shake the pressure cooker before opening the lid in order to release steam bubbles.
There are 2 options for removing pressure from the cooker.
a) Slowly release the pressure.
1. Turn the pressure control anticlockwise up to the

3. Briefly shake the pressure cooker and wait to see if there is any more steam escaping.
4. If necessary, repeat this procedure until the pressure indicator (10) drops.
5. Once the locking device (9) can be moved easily, carefully open the lid.
This method is suitable for soups, stews or foods with sensitive skin such as potatoes in their jacket.
b) Quickly release the pressure under running water.
1. Place the pressure cooker in the sink.
2. Have cold water run laterally over the lid and not over the valves!

Braising meat
Braising is a combined cooking method first roasting the meat gently and then cooking the meat in sim-
mering liquid.
1. Heat the pressure cooker at medium setting until the fat in the cooker is hot.
2. Place the meat in the cooker and press it down firmly. It will unstick after a few minutes and can then
be turned over.
3. Depending on the recipe you may then add other ingredients.
4. In each case, fill the cooker with water until the MIN marking.
5. Close the cooker.
NOTE:
Meat usually cooks at a higher setting of the pressure control (up to MAX).
Soups and stews
1. Fill the cooker only halfway when preparing heavily foaming or rising food; otherwise fill it up to MAX.
2. First cook the soup with the lid open, removing any foam.
3. Stir before closing the cooker.
4. Select a cooking setting and start cooking.
