• SHARPENING THE BLADE
WARNING: SHARPENING PROCEDURE WILL EXPOSE THE BLADE. HANDLE VERY CAREFULLY.
The blade must be sharpened periodically, according to the following instructions:
o Switch slicer off and unplug power cord
o Set thickness control knob to position 0
o Clean blade carefully while wearing cut-resistant gloves to remove food residue
o Loose sharpener locking knob ⑫
o Uplift the blade sharpener set and rotate 180 degrees to set it in its operating
position
o Lower down blade sharpener so that blade is positioned between the two sharpening
stones, then press button ⑬ to lock it
o Tighten sharpener locking knob ⑫
o Plug power cord and switch on the slicer
o Adjust thickness control knob to position 2
o Let the blade rotate for ten seconds to one minute (according to current state of the
blade), then check that the edge of the blade has no burr
o If there are some, press button ⑭ about three seconds to remove burrs (in the last
two stages, both sharpening stones work at the same time)
o Adjust thickness control knob back to position 0
o Switch slicer off and unplug power cord
o After sharpening, rotate blade sharpener back in initial position. Clean the edge of
the blade and the sharpener stones with a soft brush dampened in alcohol, to
remove whatever metal particles that may have been generated through sharpening
