OVEN (ST 90)
The internal temperature of the oven depends
on the combustion speed and on the amount
of combustible inserted. In particular, opera-
ting on the primary air regulator and so on the
combustion speed, you can obtain a regular
combustion to avoid sudden changes in tem-
perature inside the oven. If you want to heat
the oven starting from cold thermal cooker, we
suggest to raise the temperature with an ave-
rage fire, then decrease the combustion speed
to keep the temperature steady.
Thermal cookers are endowed with oven's
door with glass and are also endowed with a
thermometer which makes easier the control
of temperature.
If you want to brown dishes you should keep
them in the upper part of the oven, instead if

OVEN LIGHT (ST 90)
Cookers with oven are endowed with elec-
tric light in order to make easier the con-
trol of cooking inside the oven. In standard
cookers the switch is located on the side of
the wood box. To operate on it you have

STEAM EXCESS VALVE (ST 90)
Cooking meals sometimes may generate a ste-
am excess inside the oven. The valve is placed
inside the oven on the lateral wall towards the
opening and should be rotated to open the
ventilation holes. To prevent accidents and
burnings we recommend to operate on the
valve only before the lighting of the thermal
cooker.
you want a steady cooking you should put the
foods in the centre. For a more steady cooking
it is possible to rotate horizontally (180°) the
grill or the baking-pan at half cooking period.
For example, to cook the spineless person bi-
scuits in a correct way, it is necessary the pre-
heating of the oven at a temperature indicated
on the thermometer of 150°, keeping it in tem-
perature by adding more or less 1 Kg of wood
for every charge as the reaching of the coals.
Once the temperature becomes stable, insert
the baking-pan with the biscuits in the cen-
tral position in the oven for 10 minutes, then
extract the baking-pan, rotate it and reinsert
it again in the central position for other 5 mi-
nutes. In the end, remove the baking-pan from
the oven and leave cool the biscuits.
