Variation
Cuban Picadillo
Replace:
•
Carrot and celery with 1 small green pepper, seeded and diced small
•
Nutmeg with ½ teaspoon ground cumin, ½ teaspoon ground cinnamon and ½ teaspoon dried, crushed oregano
•
Milk with ½ cup water or beef broth; add along with crushed tomatoes; do not reduce
To add, 20 minutes before end of slow cooking time; stir well:
•
¼ cup raisins
•
¼ cup sliced pimento stuffed green olives
Cooking Directions: Prepare as indicated in the recipe.
Serve with: white or brown rice. Garnish with sliced scallions.
