Hot smoking cooking method
Prepare t he smoker as described in t he sect ion " Preparing t he smoker" .
Caut ion!
This grill get s very hot and, w hen in operat ion, should only be t aken hold of w it h barbecue gloves
and only at t he point s necessary f or operat ion.
Insert t he reversible charcoal grat e w it h t he recess point ing dow nw ards.
Now place a circle of cold barbecue briquet t es (0.5 - 2.5kg – equat es t o 1 - 6 hours cooking t ime) in t he
recess of t he charcoal grat e, leaving a space about 15cm across in t he middle.
Now light about 0.5kg of briquet t es in a barbecue st art er and bring t hem up t o f ull heat . When t hey
are covered in a light layer of ash, t he glow ing briquet t es can be caref ully t ipped int o t he space in t he
middle of t he cold charcoal. M ake sure t hat t he hot lumps of charcoal are in close cont act w it h t he cold
charcoal. The glow ing briquet t es w ill now slow ly light t he cold charcoal pieces so t hat a longer burning
t ime can be achieved and t he t emperat ure does not get so hot . Now leave t he charcoal t o set t le f or
about 5 minut es bef ore cont inuing w it h t he next st ep.
Now place some smoker chips in t he smoker box or smoker w ood on t he glow ing charcoal (see sect ion
" Smoker chips/Smoker w ood" ).

Now place t he second smoker

t heir ot her halves. Lock t he smoker drums t oget her by means of
t he t oggle cat ch locks on t he sides.
Now also place f ood on t he second grill grat e and close t he lid.
Now also open t he air vent on t he lid.
Observe t he t emperat ure show n on t he lid and if necessary readjust t he t emperat ure accordingly by
means of t he bot t om air vent (see sect ion " Vent ilat ion syst em" ).
Now cook t he f ood as direct ed in t he recipe.
Wit h cooking t imes of under 3 hours, t he air vent handle has t o be rat t led back and f ort h several t imes t o
process is not int errupt ed. Wit h cooking t imes over 6 hours, more barbecue briquet t es may need t o be ad-
coal t ongs.
