STARTING KEY (S 60 CF, S 80, S 90, S 80 SF)
The models with oven, in order to allow an
easier lighting with cold chimneys, are en-
dowed with a starting key ruled by a rod,
see picture 25. Thanks to this device, it is
possible the direct connection between the
combustion chamber and the exhaust-pipe,
in this way the result is a better draught. The
rod is to be extracted with cold kitchen and
WARNING! When the fire comes into force you must reinsert the starting key
in order to force the smoke to heat all the parts of the cooker. Cookers are
built to work with the starting key closed. If the cooker works with the starting
key open it will be limited in power and profit.

OVEN (S 60 CF, S 80, S 90)
The internal temperature of the oven de-
pends on the combustion speed and on the
amount of combustible inserted. In particu-
lar, operating on the primary air regulator
and so on the combustion speed, you can
obtain a regular combustion to avoid sud-
den changes in temperature inside the oven.
If you want to heat the oven starting from
cold kitchen, we suggest to raise the temper-
ature with an average fire, then decrease the
combustion speed to keep the temperature
steady. Wood fired cookers are endowed
with oven's door with glass and are also en-
dowed with a thermometer which makes
easier the control of temperature.
If you want to brown dishes you should keep
them in the upper part of the oven, instead
if you want a steady cooking you should put

shall be reinserted in when the combustion
is well under way.
On the S 80 SF model there are two starting
keys, one for each side. The key in corre-
spondence with the chosen flue outlet is the
one that allows to make the starting easier.
The other key has no effect and it is suggest-
ed to not use it.

cooking period.
For example, to cook the spineless person
biscuits in a correct way, it is necessary the
pre-heating of the oven at a temperature in-
dicated on the thermometer of 150°, keeping
it in temperature by adding more or less 1
Kg of wood for every charge as the reaching
of the coals. Once the temperature becomes
stable, insert the baking-pan with the biscuits
in the central position in the oven for 10 min-
utes, then extract the baking-pan, rotate it
and reinsert it again in the central position
for other 5 minutes. In the end, remove the
baking-pan from the oven and leave cool the
biscuits.
