Cooking at 3 or 4 levels
EN
Combined with the internal cooking basket, the steamer provides cooking at 3 or 4 levels: steam
preparations at the different levels (internal steam basket, external steam basket and upper
steam tray) and meals prepared in the Cuisine Companion bowl (sauces, stews or soups).
Note: To cook simultaneously at 4 levels you need to use the appliance in manual mode
and liquid preparations (soup, sauces, etc.) must be made in the Cuisine Companion bowl.
3 level recipe example: lamb, tomato sauce and vegetables.
Caution: cooking times indicated in the table on pages 67 and 68 are for steaming with
water in the bowl and not a liquid preparation.
In the bowl fitted with the mixer, place 1 tin of crushed tomatoes (750 g), 700 ml of veal stock,
1 kg of diced lamb shoulder, 1 sliced onion, 2 peeled carrots cut into slices, 1 celery stick cut into
pieces, 30 g of tomato purée, 2 sprigs of thyme, salt and pepper. Start cooking the stew at 120°C,
speed 3 for 45 minutes. Meanwhile, peel and cut 350 g of potatoes and 350 g turnips. Shell 1 kg
of peas (400 g unshelled) and remove strings from 300 g green beans.
Put the potatoes, turnips and peas into the external steam basket. Place the green beans in the
upper steam tray.
After the 45 minutes, remove the steam regulator cap and replace with the assembly consisting
of the juice collector, the external steam basket and the upper steam tray. Set to cook again at
speed 3 at 120°C for 45 minutes.
