Insert GN containers

GN 1/1 containers up to a depth of 200 mm can be inserted into the bowls with-
out additional measures. When GN 2/3, GN 1/2 and GN 1/3 containers are
used, separators (special accessories) should be used in order to minimise the
escape of steam between the containers and the heat loss associated with
this.
When even smaller GN containers are used, suspension bars must be used
in order to ensure the sealing with the bowl rim.
Ensure that there is a good seal around the insert bowls, since escaping steam
can lead to scalding. Metal parts of the cover which can be touched can be-
come dangerously hot.

Drain off water

Teflon spray). Then thoroughly clean drain and bowls.
If hot water is drained off, there is a danger of scalding.
Only open the drain cock directly above a drainage channel in the building or
a central kitchen drain.
When a base edge is used (special accessory at extra cost) use a collecting
tank with sufficient volume or drain extension (special accessory at extra cost).
After the water has been drained off, the drain pipe and the cock may have a
higher temperature. Danger of burning!
