CHECKING THE PRIMARY AIR
The air feed opening (fig.14) must be at a distance
X= see technical data TAB.1.

ADJUSTMENT:
3.2.1
PRELIMINARY CONTROLS AND ADJUSTMENT:
The appliance leaves the factory ready-calibrated and tested for the
type of gas required, however it is always advisable to check that the
type of gas and pressures at the burner are correct. If this is not the
case, follow the procedure described in the points below:
3.2.2
CHECKING INLET PRESSURE.
The inlet pressure must be measured with a water manometer (for
example a U manometer, with a minimum resolution of 0.1 bar).
To do this, proceed as follows:
- Remove the right hand side bottom panel.
- Connect the U manometer to the gas valve.
- Turn the appliance on as indicated in the instructions.
- Measure the pressure.
- Remove the manometer.
- Tighten the seal screw again.
- Seal the valve.
N.B.
The pressure must be read with the chamber operating.
3.2.3
PRELIMINARY CONTROLS AND ADJUSTMENT:
Adjust the gas valve as indicated (See Fig.11).

ADAPTING TO OTHER TYPES OF GAS.

MANUFACTURER
The nozzles for different types of gas are supplied in a small bag
together with the oven.
(See Fig.11)

Before connecting to the new gas supply, make sure that the
appliance supply pressure is the one indicated in Tab.1. This
pressure level must be guaranteed stable over a period of time.
If the infeed pressure is not within the values indicated, advise
the gas supply company and do not start up the oven until the
cause has been traced and eliminated.
3.3.1
TRANSFORMATION AND / OR ADAPTATION
To adapt to another type of gas, (for instance from methane to LPG),
it is necessary to replace the two nozzles. For this, please consult the
"Technical data TAB.1".
The nozzles for different types of gas are supplied in a small bag
together with the oven. For transformation, proceed as follows:
-Turn the gas supply tap off.
-Remove the bottom rear panel.
-Remove the seals on the primary air bushes (see fig.14)
-Move the two bushes to access the nozzles.
-Remove the seals on the nozzles.
-Take the nozzles out.
-Replace the nozzles with the ones suitable for the new gas supply
(See Tab.1).
-Replace the seals on the nozzles using a drop of red paint.
-Return the bush to its correct position (see fig.14) and tighten
the lock screw.
-Replace the seals on the bushes using a drop of red paint.
-Calibrate the pressure switch for the new gas supply (See
Tab.1).
-Using the pressure connector on the gas valve, check that the
pressure upstream of the oven is the one indicated in the table
(See Tab.1).
-Check that there are no gas leaks.
WARNING!
If a transformation has been carried out as
described in point 3.3.2., affix the new rating plate with the
correct data (see fig.3).
WARNING!
Use LOCTITE 577 thread sealant only

CHECKING
CALIBRATION
Check that the value set corresponds to the one indicated in the table
(See Tab.1).
3.5
STOPPING
- Turn the oven main switches to "off".
- Disconnect the power supply by turning off the main power
switches outside the oven.
- Turn off the gas tap
WARNINGS FOR START-UP OF THE APPLIANCE:
Initial start-up of the oven must be carried out by qualified staff, in
particular those from the MANUFACTURER Authorised Service
Centres.
Transformation of the gas supply from one family (methane, LPG) to
another must be carried out by qualified staff only. The technician
carrying out the operation must check:
A) that the rated values correspond to those of the power supply
network (electric, water, gas).
B) that the fume extractor pipe is fully operational.
C) that air infeed and fume evacuation take place properly in
accordance with current regulations.
D) that the gas circuit is properly sealed, using soapy water (not
using an open flame).

STARTING UP
WARNING!
- The oven must always be under surveillance when in operation.
- During operation the oven surfaces, and in particular the glass,
become hot, so that care must be taken not to touch them so as to
prevent scalding.
- When opening the door make sure you stand at a safe distance
from any hot steam that may come out of the baking chamber.
- Never allow unauthorised persons to approach the oven.
- Maintenance operations must be carried out on the oven at
least once a year. In this regard we recommend you stipulate a
service contract.
- The oven has been designed to cook pastry products and similar
ones
- There is a safety handle on the inside of the door, to be used in
case of accidental closure of the door with somebody inside the
baking chamber. To open the door from the inside, turn the
safety handle clockwise.
4.1
STARTING UP THE OVEN
A control panel is fitted on the front right hand side of the baking
chamber, as illustrated (See Fig.12):
1) Main switch (ON/OFF)
2) Safety thermostat (Reset)
3) Temperature regulator (+ up / -down).
4) Set temperature display (Set point °C)
5) Internal temperature display.
6) Baking chamber start/stop button (burner).
7) Start/stop timer button and set time display (Timer).
8) Baking chamber light on/off button (light)
9) Red fan alarm warning light (Fan Alarm).
10) Steam button.
11) Burner in use indicator light .
12) Reset button.
13) Red temperature alarm light (Security Alarm).
14) No gas supply to oven indicator.
15) Rotating carriage start / stop switch.
16) Vapour extractor operating switches.
NOTE:
The electronic control allows more precise and rapid
regulation of the oven. However, it is by nature more delicate than
traditional ones. To ensure that it remains in a proper state of
operation it is recommended that the buttons on the electronic control
panel be activated by pressing lightly with one finger, avoiding
excessive pressure and impact.
To turn the baking chamber on, proceed as follows:
a) Close the oven door using the handle provided.
b) Turn the main switch (fig.12 item 1) on the top control panel to
ON. Both the switch itself and the electronic panel below it will light
up.
