INSTALLATION
2.1
TRANSPORT
The oven is generally delivered wrapped in a transparent synthetic
film and mounted on wooden pallets, using road transport vehicles
(See Fig.4).
2.2
UNLOADING
NOTE:
on receiving the oven, it is advisable to check its
conditions and quality.
Raise the equipment using only and exclusively the points indicated
at the pict. 5, after removing the lids as shown.
It is easy to position the appliance after it has been unloaded, thanks
to the special rollers provided.
2.3
ENVIRONMENTAL SPECIFICATIONS
To ensure that the oven operates properly, it is advisable to comply
with the following limits:
Working temperature: + 5°C ÷ + 40°C
Relative humidity: 15 % ÷ 95 %
2.4
POSITIONING,
ASSEMBLING,
AND MAINTENANCE AREAS
WARNING!
When positioning, assembling and installing
the oven, the following specifications have to be complied with:
-
Laws and standards in force regarding the installation of gas
appliances in large kitchens.
-
Laws and standards in force regarding technical regulations
for gas appliances.
-
Laws and standards in force regarding technical regulations
for LPG.
-
Directives and indications issued by the gas supply network.
-
Directives and indications issued by the electricity supply
network.
-
Local building and fire-prevention laws.
-
Accident prevention regulations.
-
Regulations in force of the electromechanical rules.
The appliance must be installed according to current
national laws.
Remove the protective film from the outside of the oven, pulling it
gently to remove all the adhesive.
Should any adhesive remain on the oven, remove using kerosene or
benzene.
The oven must be positioned in a well-ventilated area, at least 50 cm
from the right - left side walls and rear wall.
This distance of 50 cm is essential in order to guarantee access
during maintenance operations. (See Fig. 6).
Take into account that for certain cleaning/maintenance
operations, the distance needs to be greater than stated here and
therefore, consider the possibility to be able to move the oven for
the purpose of carrying out these operations.
WARNING!
After positioning the appliance in location
foreseen, fix the appliance to the floor using at least 2 brackets of
sufficient strength (Fig.2 item 1), so as to prevent it from moving
for any reason; it must be possible to remove the brackets in
order to carry out special cleaning operations. To fix brackets
that are not supplied by the manufacturer, use commercial snap-
on fasteners, of a type suitable for the floor in question, and self-
threading screws which must only be fastened to the rear base of
the oven.
2.5
CONNECTIONS
2.5.1
GAS CONNECTION
WARNING!
Connection to the gas network must only be
carried out by specialised personnel with a proper license.
Check that the oven is set up for the type of gas supply available.
Before connecting to the gas supply, make sure that the
appliance supply pressure is the one indicated in Tab.1. This
pressure level must be guaranteed stable over a period of time.
If the infeed pressure is not within the values indicated, advise
the gas supply company and do not start up the oven until the
cause has been traced and eliminated.
Connection to the gas network can be fixed or removable, a certified
stop tap must be fitted upstream of the oven.
If flexible pipes are used, they must be made of stainless steel
according to current regulations.
Use LOCTITE 577 sealant on the gas inlet pipe thread.
When connections have been completed, carry out a seal test with the
aid of a non-corrosive leak finder spray.
2.5.2
WARNING!
must only be carried out by qualified personnel.
The housing for the exhaust vapour suction device is on the top part
of the appliance (see Fig. 7 item B).
Fit the suction device (Fig. 7 item C) (which for shipping purposes is
located inside the baking chamber) using the bolts provided with it,
and make electrical connections as indicated in the enclosed wiring
diagram (See Tab. B).
Proceed by inserting the vapour exhaust pipe into the suction device
connector (Fig. 7 item A).
NOTE:
with minimum diameter 150 mm.
Any extensions must be fitted so that the top pipes slot into the
bottom ones.
INSTALLATION
Install the suction device cover housing (Fig. 7 item D).
2.5.3
WARNING!
FOR THE SUPPLY AND UPKEEP OF AN ADEQUATE
VENTILATION AND EXHAUST GAS DISCHARGE SYSTEM
WARNING! The gas exhaust must only be connected up by
qualified technicians, in compliance with current regulations.
The appliance in question is of type B11BS and requires natural
exhaust through a working chimney with an extractor switch system.
The extractor switch system is delivered with the oven.

discharge of exhaust fumes, see the instructions in 2.4.

provide a ventilation and exhaust discharge system that is well-
designed according to current installation regulations, properly
fitted and regularly cleaned and maintained in state of constant
efficiency throughout the working life of the appliance.
The exhaust fume discharge pipe is located at the back, in the top
part of the appliance.
- Fit the extractor switch, (Fig.8 item B), (stored inside the baking
chamber during transport) inserting it into the coupling provided
(Fig..8 item C).
- Fix the chimney safety thermostat holder bracket, which is already
positioned on the ceiling of the appliance, to the extractor switch
using the screws provided (Fig.8 item D).
- Using a φ150 mm steel pipe, of the kind commercially available,
make the connection to the extractor switch (Fig.8 item A) in
compliance with current exhaust fume discharge requirements.
- When the oven is fitted to a flue this must be done by means of a
straight vertical section not less than 0.5 metres in length, as
indicated (See Fig.9), combustion fumes are picked up at point E in
the figure, the pipe F must have a minimum slope of 3% and a
maximum length of 2.5 metres, and it must be connected as indicated
in figure 9.

liable to return into the room.
eliminate the cause of the problem, by inspecting all the ducts
channelling fumes from the appliance to the exterior. Once this
has been done, the appliance can be restored to normal service.
To restore the thermostat to normal operation, first carry out the
operations described under point 6.1 and remove the plastic
guard, then press the thermostat button (Fig.10 Ref. X). This
device must never be disabled. If combustion fumes are returned
to the environment they can cause chronic or acute intoxication,
which may be life-threatening. If the thermostat has to be replaced,
always ensure that original spare parts are used.
