The device blocks the supply of gas to the burner in the event of any
problem in the evacuation of combustion fumes. Please see point 4
on how to start the supply again; it is recommended that you contact
a specialist technician if the device is triggered repeatedly.
In the event of repeated triggering of the device, check that the fumes
are being evacuated properly through the flue.
2.5.4
ELECTRICAL CONNECTION
WARNING!
Electrical connection must only be carried
out by specialised personnel, in compliance with current local
state Electric Quality Assurance Corporation requirements.
- Before starting the connection procedure, check that the
earthing system is provided in accordance with European EN
standards.
- Before starting the connection procedure, check that the main
power switch has been turned to the "off" position.
- The rating plate contains all the information necessary for
proper connection.
- Fit a main quadripole switch with fuses or an automatic switch
suitable for the values shown on the rating plate, to allow the
oven to be disconnected from the mains and that provide full
disconnection under overvoltage category III conditions.
NOTE:
The device selected should be in the immediate vicinity
of the oven and within easy access.
- The oven is delivered with the required voltage indicated on the
rating plate (See Fig.2).
- To carry out electrical connection, remove the protective cover
located on the rear side of the oven (Fig.10 item A). The connection
cable must be supplied by the installer.
When connecting to the power mains, it is necessary to fit a plug that
complies with the standards and regulations in force.
- Insert a cable with an adequate cross-section (See TAB. 10) into the
cable raceway provided (Fig.10 item B) and then connect it to the
terminal board as illustrated (Fig.10 items F and G).
- When connection has been completed, check that the supply
voltage, with the appliance running, does not differ from the rated
value by more than ±5%.
WARNING!
The flexible wire for connection to the
power supply must have characteristics at least equal to the
model with rubber insulation HO7RN-F and must have a rated
section suited to the maximum absorption (See Tab1).
WARNING
! It is essential that the oven be properly
earthed.
A special earth terminal has been provided for this purpose on the
connection terminal board (Fig.10 items F and G). It is marked with
the earth symbol and the earth wire must be connected to it.
These ovens must also be included in the unipotential system. The
terminal to be used for this purpose is located at the back of the oven
(Fig.10 item E).
It is marked with the symbol TERMINAL FOR THE EQUIPOTENTIAL
SYSTEM.

responsibility in the event of failure to comply with the above
safety precautions.
2.5.5
CONNECTING TO THE WATER SUPPLY
Connection to the water supply must be made in accordance with
local Laws and Regulations and flexible pipes for the connection to
the water supply network must comply with IEC 61770 and
subsequent modifications.

Use only the hose supplied to the
equipment. In any case never use tubes used.
WARNING!
A tap must be fitted upstream of the
appliance to shut off the water supply.
The 3/4 male gas type water filler (Fig. 10 item D) is located at the
rear of the oven. The working pressure must be between 1 and 1,5
bar.

The appliance must be connected to a supply of soft water.
For preference, a flexible pipe should be used so as to avoid even
small pressure changes in the water supply.
Leave the water to run through the pipe before connecting the oven.
If the oven is connected to a supply of hard water this will cause
rapid calcification of the steam generator

The manufacturer declines any responsibility in the
event of failure to comply with the above safety precautions.

Fasten a rubber pipe to the connector provided (Fig.10 item C).

OPERATION
3.1 PRELIMINARY CONTROL OPERATIONS

Before placing items inside the oven, it is advisable to set the oven to
a temperature above the envisaged set point for cooking and then to
lower the temperature to the required setting.
For more even results, we recommend avoiding the use of
temperatures above those recommended for the type of product being
baked.
3.1.1
CHECKING NOZZLES
Check that the oven (rated gas category and type) is set up for the
type and family of gas supplied. If this is not the case, convert to the
type of gas available.
The oven must be put into operation using the nozzles foreseen for
the rated thermal capacity (see technical data TAB.1).

CHECKING THERMAL CAPACITY WITH LPG
(G30-G31)
The rated thermal capacity is achieved with the nozzle indicated in
the table (see technical data TAB.1), the air feed opening (fig.14)
must be at a distance X= see technical data TAB.1.
Operation depends on the inflow pressure available (see technical
data TAB.1):
Should the pressure be outside the values indicated above, advise
any
those responsible for the system and do not start up the oven until the
cause has been traced and eliminated.
3.1.3
CHECKING THE THERMAL CAPACITY WITH
METHANE GAS (G20-G25)
The rated thermal capacity is achieved with the nozzle indicated in
the table (see technical data TAB.1), the air feed opening (fig.14)
must be at a distance X= see technical data TAB.1.
Operation depends on the inflow pressure available (see technical
data TAB.1).
Should the pressure be outside the values indicated above, advise the
gas supply company and do not start up the oven until the cause has
been traced and eliminated.
NOTE:
Should an additional test be required for the
thermal capacity, it can be performed using the volumetric
method.
