SPECIAL MAINTENANCE
6.1
PRELIMINARY SAFETY OPERATIONS
WARNING!
All maintenance operations and repairs must
be carried out using suitable accident prevention equipment, by
specialised and properly licensed technicians, approved by the
manufacturer.
Before carrying out any maintenance operation, disconnect the
gas supply by turning off the main supply tap, and disconnect the
power supply by turning off the switches fitted on the outside of
the oven.
All precautions are of importance to ensure that the oven remains
in a good state, and failure to observe them may result in serious
damage which will not be covered by the warranty.
WARNING!
Periodically (at least once a year), and every
time operating malfunctions occur, the appliance must be checked
by a specialist technician who must check the general state of the
appliance, and in particular the state of the burner. In the
presence of any type of irregularity the burner must be replaced
immediately.
When any maintenance operations are carried out on the gas
circuit, use LOCTITE 577 as a sealing agent
WARNING!
Any maintenance operations involving the
door area must only be carried out after allowing the latter to cool
down.
WARNING!
Some operations, listed here below, need to
be carried out by at least two people.
6.2
GENERAL CLEANING
After carrying out the operations described in point 5.1 above, clean
the appliance as follows:
Regularly clean the appliance in general. After leaving it to cool
down, carefully remove, from internal and external parts, all residues
that might have collected during cooking, using a damp sponge or
cloth and a little soapy water, if necessary. Rinse and dry the areas,
being sure to wipe parts with satin finish in the direction of the finish.
WARNING!
Carefully clean off regularly any fat or
grease that may have dripped during cooking as this is a
potential fire hazard.
WARNING!
Never clean the appliance with direct jets of
water or with pressurised water jets. Do not allow water or any
cleansers used to come into contact with electrical parts.
The use of toxic or harmful detergents is prohibited.
NOTE:
Do not clean the tempered glass in doors while it is
still hot. Do not use solvents, detergents containing aggressive
substances (chlorides, acids, corrosives, abrasives, etc. ...) or
equipment that could damage surfaces. Before starting up the
appliance again, make sure that none of the cleaning equipment
has been left inside.
WARNING!
In the presence of the aspirator, periodically,
carry out a thorough cleaning of any grille in the air inlet and in the
context, if present, remove it to verify that inside and on the fan there
is no dirt.
6.3
REPLACING PARTS OF THE OVEN
6.3.1
REPLACING THE LIGHT BULB
After carrying out the operations described in 6.1 above, to replace the
light bulb proceed as follows:

- Removing the protective light casing by unfastening the top and
bottom screws;
- Replace the bulb (Plate A Item 4) with another of the same type and
power;
- Perform the above operations in reverse order to reassemble.
6.3.2
REPLACING THE WATER VALVE.
After carrying out the operations described in 6.1 above, to replace the
water valve proceed as follows:
- Unfasten the screws and remove the central rear panel.
- Unfasten the bottom section of the copper pipe, after loosening the
nut;
- Remove the two screws fastening the valve;
- Unscrew the valve from the reduction manifold;
- Replace the valve (Plate A Item 16);
- Perform the above operations in reverse order to reassemble.
6.3.3
REPLACING THE FAN MOTORS
After carrying out the operations described in 6.1 above, to replace the
motors proceed as follows:
- Check that the automatic switch has not been triggered by a
malfunction, after removing the plastic guard (Fig.10 Ref. Y). If this
is not the case, proceed as follows;
- Remove the rear panels by unfastening the fixing screws;
- Open the door, extract the carriage and remove the left hand, right
hand and rear air conveyors;
- Remove the fans (Plate A Item 5) by unfastening the screw;
- Remove the motors (Plate A Item 23) by unfastening the screws.
- Perform the above operations in reverse order to reassemble.
6.3.4
REPLACING THE LIGHTERS
After carrying out the operations described in 6.1 above, to replace the
lighters proceed as follows:
- Remove the top and bottom rear panel.
- Disconnect the wires from the lighter (Plate A Item 12) to the ignition
card.
- Unfasten the 2 screws from the bracket supporting the lighter.
- Replace the lighter.
- Perform the above operations in reverse order to reassemble.
6.3.5
REPLACING THE FLAME DETECTORS
After carrying out the operations described in 6.1 above, to replace the
flame detectors proceed as follows:
- Remove the top and bottom rear panel.
- Disconnect the wires from the flame detector (Plate A Item 11) to the
ignition card.
- Unfasten the screws fixing the flame detectors.
- Replace the flame detector;
- Perform the above operations in reverse order to reassemble.
6.3.6
REPLACING THE DIGITAL PYROMETER
After carrying out the operations described in 6.1 above, to replace the
digital baking control pyrometer proceed as follows:
- Remove the right hand side panel behind the control panel.
- Remove the metal pyrometer guard
- Disconnect the wires feeding the pyrometer (Plate A Item 46)
- Unfasten the four screws fixing the brackets, then remove the
pyrometer.
- Replace the pyrometer;
- Perform the above operations in reverse order to reassemble, making
sure that the connectors are in the right positions.
6.3.7
REPLACING THE TEMPERATURE PROBE
After carrying out the operations described in 6.1 above, to replace the
thermocouple proceed as follows:
