Ravioli with Meat Filling:
100 g (1/4 Lb.) Finely Ground Roast Veal
100 g (1/4 Lb.) Finely Ground Roast pork
100 g finely chopped Parma ham
50 g (2 Oz.) Grated Parmesan Cheese
1 Tbsp. Breadcrumbs
Nutmeg
Salt and Pepper
Mix and then finely blend all the ingredients
Ravioli with Vegetable Filling:
500 g (1 Lb) cooked and finely chopped spinach
200 g (7 Oz.) Ricotta Cheese
100 g (3.5 Oz.) Grated Parmesan Cheese
2 Egg Yolks
1 Tbsp. Breadcrumbs
Nutmeg
Salt and Pepper
Mix and then finely blend all the ingredients
