Mix the ingredients and pass the dough through the flat rollers of the ATLAS 150
Pasta Machine until you reach 5 or 6 on the regulating knob. The dough should be
flexible, not sticky and exactly the same width as the flat rollers (Fig. 1).
Remove the double-cutter from the ATLAS 150 and place the ravioli attachment as
shown in Figure 2.
Lightly flour the dough sheet on both sides; fold it in two (Fig. 3) even out the sides
of the sheet by cutting the uneven edges with a knife (Fig. 4) and insert the dough
sheet into the center of the Ravioli rollers turning the handle about one quarter of a
turn (Fig. 5).
Separate the two parts of the dough sheet, placing them on the small metal rollers, one
on each side (Fig. 6).
Place the hopper on the attachment as shown in Figure 7.
Pour the filling between the two dough sheets and slowly turn the handle (Fig. 8 & 9).
Add more filling when necessary but always make sure that you use up all the filling
that is in the hopper before reaching the end of the dough sheet. Use the spoon provi-
ded to remove any excess filling (Fig. 10).
Place the strip of ravioli on a lightly floured tablecloth and let it dry for a few minu-
tes (5 - 10 min.). Separate the ravioli one by one as shown in Fig. 11. The ravioli can
be cooked right away, or stored in the refrigerator for up to 2 - 3 days. For longer
storage, the Ravioli must be placed in the freezer.
WARNINGS
- Do not immerse the machine in water and do not place in the dishwasher.
- For cleaning the machine, you can use a small soft brush and a wooden
skewer.
- If necessary, raise the scraper to clean the ravioli-forming roller (Fig. 12).
Always remember to then place the scraper back into its original position.

Serves 6
Ingredients:
250 g (1/2 Lb) all purpose Flour
250 g (1/2 Lb) Durum Wheat Flour
4 Eggs
2 Oz. of Water (approx. 50 cc)
