Breve
Breve is equal parts espresso and half & half, with a
thin layer of froth (1:1).
1. Steam a pot of half & half to 66°C (150°F) until it
produces a layer of dense froth above the milk.
2. Pour espresso in the cup.
3. Pour steamed half & half into the cup – an equal
amount to the espresso. HINT: Use a spoon to hold
back the froth as you pour.
4. Use a spoon to place a very thin layer of froth on
top of the drink.
Cappuccino
Cappuccino is 1/3 espresso, 1/3 hot milk and 1/3 milk
froth (in other words, 1:1:1).
1. Steam a pot of milk to 66°C (150°F) until it
produces a layer of dense froth above the milk.
2. Pour espresso in the cup.
3. Pour just steamed milk into the cup – an equal
amount to the espresso. HINT: Use a spoon to hold
back the froth as you pour.
4. Use a spoon to place froth on top of the espresso
and milk – again, an equal amount to the espresso.
5. Top it off with sugar, cinnamon or cocoa powder.
Caffe Mocha
Caffe mocha is made from 1/3 espresso, 1/3 chocolate
sauce, and 1/3 steamed milk and milk froth.
1. Steam a pot of milk to 66°C (150°F) until it
produces a layer of dense froth above the milk.
2. Pour espresso into a cup.
3. Pour chocolate sauce into the cup. HINT: If using a
clear cup, pour the chocolate from around the edge
of the cup, creating a "waterfall" effect.
4. Pour milk into the cup, then add the froth.

Americano
An Americano is made of 1/3 espresso and 2/3 hot
water (1:2).
1. Pour espresso in a cup.
2. Steam a pot of water to 66°C (150°F).
3. Pour the water into the cup, about twice as much as
the espresso.
Boiling-Hot Water
The milk frother may be used to make hot water.
1. After preheating the machine, place a container
beneath the milk frother.
2. Turn the steam knob to the ON position.
3. The machine will start discharging hot water. The
discharge will never take longer than 120 seconds.
4. When you have the amount of water you need, turn
the steam knob to the OFF position.
