6. Changing Temperature Display: Fahrenheit to Celsius
1. Turn off power to unit.
2. Press and hold
3. Display is converted to Celsius. Reverse process to return to Fahrenheit display.
7. Operating
Morning:
a. Prepare unit by following instructions found in Chapter 4. If holding moist product, fill
the water tray before beginning daily operations. The degree of moisture in the cabinet
can be regulated with the vent/slide on the cabinet door. Note: The PHD can be
operated without water in the tray when a dry product is being held.

temperatures. LED 1 will light when the controller calls for heat.
Operator will be exposed to steam or very hot air emitting from the PHD when unit is
operating. Wear proper protective clothing when working with an operating PHD. Do
not place exposed face or hands near the Product Holding Device when opening or
