4. DEVICE OPERATION

• Before first use, please remove the protective film from the device. Wash interior and exterior surfaces
with warm water and a degreasing agent, which is used for washing kitchen utensils. Do not use abrasive
cleaners or others that could scratch the surface. Only use a damp cloth for cleaning. After washing the
device, leave it to dry completely, then reconnect to the mains.
• With the device equipped with a temperature controller, you can increase or decrease the temperature
within the range from 110 to 190°C. The appliance is additionally equipped with a temperature limiter
set to 230°C to protect the oil against overheating, which may happen if the temperature controller is
damaged.
• The unit is equipped with an electric igniter (spark generator) to facilitate daily operation - starting the
pilot burner.
• When the device reaches the desired temperature, the thermostatic valve cuts off the gas supply to the
main burner. After the oil temperature has fallen, the valve automatically opens the gas supply and the
temperature of the oil (frying grease) increases
• It is very important to carry out the process of „burning out" the fryer during the first use. This
should be done as follows (during the first connection:
• pour the appropriate amount of oil (frying grease) into the tank - to the level marked on the tank wall;
• use the knob to set the temperature at 150°C - position 6 on the knob
• after heating up, wait about 15min and then drain the oil (frying grease)
• fill the tank with fresh oil (frying grease) - you can get started
• During frying, the temperature of the oil in the vessel should be controlled by the temperature
controller
• The appliance is equipped with a basket with a holder. After frying the fries, the basket can be hung on the
bracket for the fries to drip excess oil (frying grease). Under the basket is a base that prevents the fries
from getting to the bottom of the tank, below the heating pipes.
• The tank is fitted with the so-called cold zone to prevent too the oil from going bad too quickly.
• To remove the residue from the tank, open the drain valve to empty the tank and then wash it.
• Do not switch on when the tank is empty or there is too little oil - below the minimum level. Refill oil
before switching on.
• Remember to refill used oil with new one (adding used, overheated - dark oil may cause fire)
• Remember that the fries must be dry before being put into the hot oil - this will prevent the formation of
foam and spilling oil out of the tank
• Remember that the tank can be emptied after the appliance has been switched off and after the oil has
cooled down
• Do not cover the vents of the appliance (flue)
• Check the room ventilation systems (permanent openings for fresh air inlet) and fumes evacuation devices
(fans, hoods) are in good order to keep healthy the room. If in doubt, please contact our service. The end
user is responsible for cleaning and using the fryer in accordance with this manual. If you have any problem
with units, please contact Stalgast Technical Service.
• Before operating the fryer, make sure that no objects blocks the inlet of fresh air to burners (e.g. the ope-
nings inside the compartment behind the door).
• Before operating the fryer, make sure that no flammable substances (bottles, papers) are stored near the
appliance or inside the compartment behind the door).

4.1. Starting the appliance

In order to run the fryer, make sure that the appliance is connected to a power supply (if such a connection is
provided) and then light up the control pilot flame (control pilot prevents uncontrolled gas leaks). To do this:
• Set the valve knob to the position marked with asterisk
• Press the key on the valve marked with red star, hold the key to activate the spark generator (green button)
