Cleaning the frying/cooking surface

Preparatory work for cleaning

Cleaning when lightly soiled

. Turn the knob to low power level so that the frying/cooking surface reaches a temperature of
approx. 100 °C.
. During the cleaning, regularly check how full the Gastronorm container or the drip catcher
drawer is, and empty in good time.
. Clean cooking residue using water, some cleanser and a stainless steel pot scourer. Wipe
down the cleaned surfaces with a clean, damp dish cloth and rub dry.
. Remove dark spots on the surface with vinegar cleaner and cleaning sponge.

Removing encrusted and burnt on material

Danger of burns! Be careful when using grill cleaners. Do not spray onto hot surfaces.
At 80 °C, the grill cleaner evaporates. Ensure that the room is well ventilated.
. Spray the encrusted frying surface with a grill cleaner and leave it for 10 to 15 minutes. Fol­
low the instructions provided by the manufacturer of the cleaner for stainless steel surfaces.
. During the cleaning, regularly check how full the Gastronorm container or the drip catcher
drawer is, and empty in good time.
. Clean the frying/cooking surface, the fat collection grooves and the drain pipe.
. Rinse the cleaned surfaces with a clean, damp dish cloth, without the use of a cleaning
agent. Then thoroughly rub the surfaces dry.
. Spray frying/cooking surface with food safe maintenance emulsion. Spread maintenance
emulsion evenly with a kitchen cloth.

D Do not block the fat collection grooves, oth­
erwise liquid may penetrate inside the appli­
ance.
. Turn off appliance and let it cool down.
D A large pan of cold water on the frying/cook­
ing surface speeds up the cooling down.
. Fit the Gastronorm container or drip catcher
drawer.
. Remove splash guard. Careful hot.
. Remove frying/cooking residues with a
cleaning scraper.
D Be careful, do not scratch the surface.
