Cut the finished sheet into 10 in. (25 cm)
lengths (Fig. 12).
Attach the selected cutting accessory and
start feeding the sheet through the rollers
to form the desired pasta (Fig. 13).
Note 1: If the rollers are not able to cut, it
means that the sheet of pasta is too soft. In
this case, we recommend kneading the dough
with your hands, adding some flour, and
feeding it through the smooth rollers again.
Note 2: If the sheet of pasta is too dry and
is not "gripped" by the cutting rollers, we
recommend kneading the dough by hand
and adding some water. Feed the dough
through the smooth rollers again.
Lay the pasta on a damp clean tea towel.
Cook immediately. If you plan on storing
the pasta (for 1 month at the most), you
can use the handy Marcato Tacapasta
Drying Rack to allow it to dry.
Pasta dries in about 5-6 hours, depending
on temperature and humidity, and can be
stored in suitable kitchen containers.
CLEANING AND MAINTENANCE
A) How to remove and replace the blade
- Unscrew the blade access cap (Fig. 14).
- Push the blade towards the access hole
(Fig. 15).
- Pull the blade upwards (Fig. 16).
- To replace the blade, follow the previous
steps in reverse.
B) How to remove and replace the lid
- Lift the lid all the way (90°) and push back
on lid until it's released from the pin (Fig. 17).

- To replace the lid, reverse the previous
step.
C) How to attach and remove accessories
- Insert the accessory into the hexagonal
hole on the side of the machine.
- Rotate the accessory 30° until it is fully
seated (Fig. 18).
D) Cleaning
- Always unplug the power cord before
cleaning or performing maintenance.
- Never wash the machine and accessories
with water or in the dishwasher.
- To clean the machine after use, use a brush
and a toothpick or wooden skewer (Fig. 19).
- Any repairs must be performed by qualified
service personnel.
- Do not access internal parts: please
contact Marcato for assistance.
- For proper storage, we recommend storing
the machine and its accessories inside their
original packaging.
