4.4 Emptying and Cleaning
Grease separators must be emptied and cleaned by qualified persons at least once a month,
section 1.5 "Qualification of Persons". More frequently in accordance with the compo-
sition of the waste water.
Enter the date and address of the waste disposal company in the operating logbook.
The date and data on the development of the grease layer thickness are stored on an
integrated SD card for the optional ACO grease layer thickness measuring instrument.

4.4.1 Checks
Specify other disposal cycles. The retention capacity of the sludge trap (half of the

sludge trap volume) and the grease separator (volume of the grease collector) may not
be exceeded.
For grease separators with a sludge and grease suction unit or with a disposal and
■
rinsing unit: Carry out a cleaning process and a function check, if necessary check the
free drainage of the filling device according to EN 1717.
Check the inspection door(s) and in particular the condition and sealing capacity of the
■
gasket(s).
Clean the appliance for taking samples.

4.4.2 Basic Model
Disconnect the supply of waste water (1) or discontinue kitchen operations.
Î
Open the inspection door (5) and insert the suction hose (suction vehicle).
Î
Switch the suction pump on until the content of the tank has gone down by approx. a
Î
quarter.
Crush layers of hardened fat in the tank.
Î
Switch on the suction pump (suction vehicle) and clean the tank.
Î
Switch on the suction pump (suction vehicle) and suction off dirty cleaning water.
Î
Switch off the suction pump (suction vehicle) and remove the suction hose from the

inspection opening (5).
Fill at least 2/3 of the tank capacity with fresh water.
Î
Close the inspection door (5) and establish a supply of fresh water (1) and/or commence
Î
with operations in the kitchen.
