Gently wind the handle to begin pushing the meat through the nozzle and in to the casing.
4.
Note: BUFFALO recommend that the slower gear (the higher cog on the side of the
casing) is used for stuffing the sausage casing.
Knot the end of the casing against the sausage meat.
5.
Note: This expels any air from the nozzle and prevents an air pocket forming in the
sausage.
Slowly wind the handle to push the meat through the nozzle.
6.
Hold the casing back slightly as the handle is turned to ensure the casing is properly filled with the
7.
sausage meat.

Linking the Sausages

Linking the sausages can be done during the stuffing process or after.
Gently squeeze the sausage at the point of the link with thumb and forefinger.
1.
Make a gap in the sausage meat, taking care not to break the casing.
2.
Twist both sides of the gap in opposite directions to create the link.
3.
WARNING: Overfilling the casing may cause it to burst while linking or during cooking.
Under-filling can create air bubbles which can fill with fat during cooking and burst the
casing.
Repeat for the remainder of the sausages.
4.
