Making butter
It is easy to make butter, providing the various production stages are closely complied with.
Basic principles
-
Butter is produced mainly from the cream of milk.
-
The cream needs to be churned.
-
Churning involves agglomerating the tiny globules of fatty material contained in the cream,
applying a physical movement: one gets butter and whey (or butter‐milk).
-
Butter comprises approx.16% water, 82% fatty material and 2% non‐fatty material.
-
Salted butter has a salt content of over 3%: semi‐salted butter has a salt content in the range of
0.5 to 3%.
Making cream (skimming the milk)
There are various ways of obtaining cream from unpasteurised milk (to be pre‐filtered) or full‐cream
milk.
-
By heating the milk and collecting cream from the surface using a skimmer.
-
By bringing the milk to the boil and then allowing it to chill (at least 12 hrs); the cream will rise to
the surface and can be collected with a skimmer.
-
By leaving it to cool for 24 to 48 hrs, to allow the cream to rise to the surface to be collected with a
skimmer.
-
The larger the surface, the greater the yield of cream. The cream must be left to cool for 24 hours
before churning.
-
20 to 22 litres of milk are required to make 1 kg butter.
-
For the sake of simplicity, we recommend using pre‐produced cream sold in shops.
