HOW TO PREPARE THE MACHINE FOR USE
Attach the machine to a corner of the table
with the clamp provided and insert the handle
into the SLOW opening as illustrated in Figure
1. The hole (the fitting) FAST can be used to
facilitate the rotation of the crank in case the
dough is too hard.When using the machine
for the first time, clean all the pieces with a
dampened cloth. Clean the machine with a
dampened cloth before the first use.
HOW TO PREPARE THE DOUGH
Pour the flour into a bowl and break the eggs
into the center (Fig. 1).
Mix the flour, the eggs and the water with a fork
and knead the dough.
Keep kneading the dough by hand until it is
smooth and sticks together Fig. 2). If the dough
is too dry, add some water, if it is too sticky add
some flour.
Take the dough out of the bowl and place it
on lightly floured table. Continue to knead the
dough by hand, if necessary (Fig. 3). Then cut it
into small pieces.
Attention: great dough should never stick to
your fingers.
Helpful hint: do not use cold eggs just taken
from the refrigerator!
BASIC RECIPE FOR THE DOUGH - Serves 6 people
• 500 g of soft-wheat flour
• 5 whole eggs
To achieve better pasta, for the flour use a mixture of 250 g of
soft-wheat flour and 250 g of durum-wheat flour
(semolina / durum wheat semolina).
100 g of flour will be needed while processing the pasta with the machine.

HOW TO MAKE PASTA WITH THE REGINA
Insert a small piece of dough into the hopper
and turn the crank (Fig. 4). After a few
moments the pasta will exit the die. When it
has reached the desired length, cut the pasta
with the special arc (Fig. 5).
Turn again the crank slowly and cut the pasta
again. Put more small pieces of dough into the
hopper and repeat these steps. If the dough
tends to stick, lightly dust the small pieces of
dough with flour before putting them into the
hopper. Place the pasta on a table cloth and
leave to dry for about an hour (Fig. 6).
Bring abundant salted water to a boil, where
you will cook the pasta.
Fresh pasta cooks in just a few minutes, on
average between 2 and 4 minutes, depending
on its thickness.
Dry pasta needs longer to cook, from 4 to 6
minutes, depending on the thickness.
Stir gently and drain the pasta when it is
cooked. Pour the pasta into the pan with the
sauce and add some of the water in which the
pasta was boiled.
Mix and add some grated Parmesan cheese.
Serve on heated plates and... enjoy!
