Wok burner

GB 14
Always make sure that the flames remain under the pan. If the flames
are jumping around the pan then you are wasting a lot of energy. The
handles can also get too hot. Do not use pans with a base diameter
smaller than 12 cm. These will not be stable.
• (Stir) frying, heating through large quantities and frying are best
done on the rapid burner or wok burner.
• Use the simmer burner for preparing sauces, simmering and
heating dishes through. On full power, this burner is big enough for
heating food through.
• Cook with the lid on the pan. You then save up to 50% energy.
• Use pans with a smooth, clean and dry base. Pans with a flat
base are stable and pans with a clean base transfer the heat more
effectively throughout the dish.
Using the wok burner you can prepare dishes at very high
temperatures. When doing so it is important that you:
• cut the ingredients into strips, slices or pieces beforehand.
• use good quality oil, such as olive oil, corn oil, sunflower or peanut
oil. A little is enough. Butter and margarine burn due to the intense
heat.
• Put the dishes with the longest preparation time into the pan first,
so that by the end of the preparation time, all of the ingredients are
all fully tender.
