CAUTION:
Never leave the espresso machine unattended while brewing espresso!
Never touch the hot surfaces of the espresso machine. You could scald your-
self! The portafilter, the filter insert and the steam / hot water outlet are
especially hot during and after use!

The coffeebeans and the timing of grinding them as well as the grade to which the
beans are gound are essential for brewing good coffee. We recommend grinding the

beans directly before brewing the coffee. The brewing process should last between
25 and 30 seconds. If the beans are ground too coarse the water will flow through
too fast and the coffee will be underextracted, leading to a less intensive taste,
brighter colour and very thin and white crema. If the beans are ground too fine the
water will flow through very slowly, thus overextracting the coffee leading to a very
dark colour and no crema. To get a perfect coffee you should grind the beans freshly
and adjust the amount of ground coffee to the desired amount of brewed coffee,
about 1–2 measuring spoons per cup. Freshness of the beans and prompt grinding
are deciding factors for the quality of your coffee. Long storage periods of coffee
have a very negative influence.

The stainless steel steam / hot water outlet with steaming nozzle turns fresh, cold
milk into creamy, warm, frothy milk to produce a delicious cappuccino or caffe latte.
Proceed as follows:
First, make an espresso in a bigger cup.
Push the steam mode button
frothing milk: The blue buttonframe starts blinking, while the machine is heating
up. Wait for the blue buttonframe to light up permanently, then the appliance
is hot enough to produce steam. The 2 coffee mode buttons will be off and not
responding during this.
During the heating-up phase, pour fresh, cold whole milk from the fridge into
a tall, narrow milk jug (best made from stainless steel). The milk jug should be
about 70 mm tall, +/− 5 mm. Calculate for approx. 100 ml milk per cappuccino
and take into account that the volume of cold milk will double once it is steamed.
Once the blue buttonframe of the steam mode button is lit up steadily, lower the
steam / hot water outlet with the thermo-insulated rubber grip to position it over
the holes in the drip tray.
Now turn the steam / hot water control (I) counterclockwise to the left to the
maximum position. Let hot steam shoot from the steam / hot water outlet into
the drip tray for approx. 10 seconds to clean out the steam / hot water outlet and
remove remaining water.

Turn off the steam / hot water control again (clockwise, until off-position).
Swivel the steam / hot water outlet up, using the heat insulated rubber grip.
Lower the steaming nozzle of the steam / hot water
outlet roughly 2 cm into the milk, then turn the
control to the left to the maximum position. Steam
escapes.
Keep the steaming nozzle directly under the milks
surface resp. move the milk jug up and down,
slightly turning it, until nice, creamy, steamed milk
has formed.
When the milk is steamed enough, turn the control
off again. Only then remove the milk jug.
Gently tap the milk jug against a worktop to let
potential air bubbles escape. Gently sway the jug to
even out the consistency.
Pour the steamed milk directly into the espresso.
Lower the steam / hot water outlet back down over the holes in the drip tray
with the heat insulated rubber grip, return the control to the steam position
and let some steam escape into the drip tray to flush milk remains out of the
steam / hot water outlet. Turn the steam / hot water control off again. Then wipe
the steam / hot water outlet clean with a damp cloth. CAUTION: The steam / hot
water outlet ist hot!
Press the steam mode button again to turn it off and return the machine into
coffee brewing mode. All the blue buttonframes are lit up constantly again.
NOTE: The machine will be too hot to brew coffee immediately after using the steam
function. This is being indicated by the coffee mode buttons blinking blue after
changing back to the brewing function.Wait until the machine has cooled down and
the coffee buttons are lighting steadily again, otherwise the coffee will taste slightly
burned.The cooldown process can be sped up by letting out some water through
the portafilter (with inserted filter, but without ground coffee).
