IMPORTANT
It is generally a good idea not to operate the ma-
chine idly, to prevent unnecessary wear and tear of
the rotating components. It is therefore advisable
to stop the machine using the button O any time
work must be stopped.
In the event of any accidental introduction of a for-
eign body which shall cause a sudden stop of the
machine, the correct procedure for action is as
follows:
• immediately press the red button O (STOP)
• unplug the machine from the mains
• unscrew the handwheel (V1)
• disconnect the tenderiser unit from the gearmotor
6. Dismantling and cleaning
As previously stated, at the end of each machining
operation, after having shut down the machine via
the switch (O), disconnect the power plug from the
socket before carrying out any cleaning or disas-
sembling. Do not pull the power cord to discon-
nect the plug.

To release the body from the gearmotor (MT), sim-
ply loosen the handwheel (V1) with a few turns and
remove the working unit, removing it horizontally
from its housing.
Proceed in the reverse order of the assembly to
separate the various components and then clean,
wash and dry them.
IMPORTANT
Use water only (preferably hot water) and neutral
dish-washing detergent for washing. Never use
acid or caustic products for cleaning. Use of these
products can cause deterioration in the quality of
component surfaces and the appearance of spots
and/or cracking. Use of these products can also
lessen the characteristics of food suitability of
components over time.

• remove, in order: handwheels (V3), upper casing
(GS) knife shaft drive (AM) and knife driven shaft
(AC)
• remove foreign material that caused blockage
Never, under any circumstances, put hands or
tools of any kind in the appliance when it has not
been physically disconnected from the motor of
the machine. This operation could cause serious
injury to the operator.
To keep the tenderiser in perfect conditions of use,
always follow cleaning and washing operations
with careful drying with a cloth or paper towel.
If you plan not to use the tenderiser for a long time,
ensure perfect preservation of the working unit by
lightly lubricating the surface with edible oil, which
absolutely will have to be removed prior to later
use.
