. Wash drain plug in the dishwasher or by hand using a grease-dissolving detergent.
. Remove dark spots on the surface with a vinegar cleaner and a stainless steel pan cleaner.
. Rinse braising pan and drain pipe thoroughly with water and rub dry.
. Spray braising pan with food quality maintenance emulsion. Distribute the maintenance
emulsion evenly with kitchen roll.

. Drain off cleaning residues into the Gastronorm container: Clean the drain pipe thoroughly
with a round brush while draining the rinsing agent suds.
. Rinse braising pan and drain pipe thoroughly with water and rub dry.
. Clean drain plug in the dishwasher or using a grease-dissolving detergent.

. Turn off appliance and let it cool down.
Braising pan
. Push in the Gastronorm container and fit the
drain plug.
. Fill the braising pan with approximately 3
litres of water. Add rinsing agent and vinegar
cleaner and clean with a cleaning brush or
with a stainless steel pan cleaner.
. Drain off cleaning residues into the Gastro­
norm container: Clean the drain pipe thor­
oughly with a round brush while draining the
rinsing agent suds.
. Turn off appliance and let it cool down.
Braising pan
. Push in the Gastronorm container and fit the
drain plug.
. Fill up the braising pan with vinegar and wa­
ter at a ratio of 1:1 (1 part vinegar, 1 part
water). Boil briefly and allow to work for 15
to 30 minutes depending on the limescale
deposit.
. Then rinse braising pan with clear water.
