fried eggs and Praline bacon
Makes 4 servings
Ingredients:
1 tablespoon brown sugar
1 teaspoon chili powder
2 tablespoons finely chopped pecans, toasted
½ pound bacon
1 tablespoon butter
4 eggs
Salt, to taste
Pepper, to taste
Method:
Insert the removable plates, choosing the side with the flat griddle
surfaces. Lift the handle of the griddle and press the Lid Switch to release
the griddle and allow it to open completely and lie flat, parallel with
the countertop. Turn the Position Control Knob to "Open" and the
Temperature Control Knob to 375°f. The Ready light will illuminate as
soon as the griddle is preheated.
While the griddle is preheating, stir together the bacon topping. In a small
bowl, combine the brown sugar and chili powder. Set aside.
Place bacon slices in single layer on griddle (lid side). Cook for 4
minutes or until browned. Turn and cook for 2 minutes. Turn and
sprinkle with brown sugar mixture and chopped pecans. Cook for 1 to 2
minutes more or until sugar melts and bacon is crisp.
Meanwhile, coat bottom griddle plate with butter. Crack eggs onto griddle.
Cook for 3 minutes or until egg white is set and yolk is beginning to
thicken. Remove from griddle or turn and cook 1 to 2 more minutes for
over easy eggs.
Carefully remove bacon and eggs with a heat resistant nonmetal utensil.
