Orange-basil french Toast
with fresh blueberry Syrup
Makes 4 servings
Ingredients:
4 ounces reduced-fat cream cheese, softened
¼ cup powdered sugar
1 teaspoon finely grated orange peel
1 teaspoon finely chopped fresh basil
8 slices French bread, ½-inch thick
3 eggs, beaten
½ cup milk
½ teaspoon cinnamon
Garnish: 8 orange segments and 4 sprigs of fresh basil, optional
Method:
Insert the removable plates, choosing the side with the flat griddle
surfaces. Turn the Position Control Knob to "Closed" and the Temperature
Control Knob to 350°f. The Ready light will illuminate as soon as the
griddle is preheated.
While the griddle is preheating, assemble the French toast. In a small bowl
stir together cream cheese, powdered sugar, orange peel, and basil until
thoroughly combined. Divide cream cheese mixture among four slices of
bread, spreading evenly over each slice. Top each with a second slice
of bread.
In a shallow bowl, beat eggs, milk and cinnamon. Dip stuffed bread slices
into egg mixture, coating both sides. Place on preheated griddle and close
lid, sandwiching French toast between the griddle plates. Cook for 3 to
4 minutes or until golden brown. Remove with a heat resistant nonmetal
utensil and serve warm with "Fresh Blueberry Syrup" or desired topping.
For an optional garnish, top each serving with blueberry syrup, 2 orange
segments, and a sprig of fresh basil.
