OPERATION
General
Use the following information and procedures to operate
Induction Dry Wells.
WARNING
Read all safety messages in the IMPORTANT SAFETY
INFORMATION section before operating this equipment.
BURN HAZARD:
• Do not leave metal objects or utensils on or near unit.
They may become hot.
• Use caution when wearing rings, watches, or other
ferrous objects around unit. They may become hot.
• Some exterior surfaces on unit will get hot. Use caution
when touching these areas.
Pan Specifications
Pans used with an Induction Dry Well must meet the following
specifications:
• Standard stainless steel hotel pans in 2-1/2" or 4" depths
• Proper size:
Full-Size
1/2 Size
1/3 Size
1/6 Size
• Flat bottom
The following pans cannot be used with an induction well:
• Glass Pans
• Aluminum Pans without a ferrous base
• Earthenware Pans
• Ceramic Pans
• Copper Pans
IMPORTANT NOTE
The Induction Dry Well automatically detects if a pan is placed
properly in the unit. If a pan is not placed properly during
operation, the display will flash "PAN", and the unit will not
operate. After setting the height of the adjustable tray, make
sure the tray adjustment handles are in the vertical position.
NOTE: If a pan is not detected in the heat zone, the corresponding
zone will turn off automatically after 10 minutes.
Control Panel
The following are descriptions of the controls used to operate
the unit. All controls are located on the control panel.
Back Zone Button
The back zone selection button is used to control the temperature
settings for the back zone. The symbol corresponds with the back
zone symbol shown on the glass surface of the adjustable tray.
Front Zone Button
The front zone selection button is used to control the temperature
settings for the front zone. The symbol corresponds with the front
zone symbol shown on the glass surface of the adjustable tray.
Up and Down Arrows
The up and down arrows (

Operating the Unit
Startup
1. Before turning on the unit each day, clean the glass surface
using an appropriate cleaning wipe, damp paper towel, or a
damp cloth. CAUTION! Wipe up all spills and splashes
immediately. Make sure unit is dry before using. Do not
allow liquid to run into the unit.
NOTE: The unit can be turned off at any time by pressing the
button. The internal memory will store the temperature
control setting until the unit is powered back on.
2. Make sure the unit is plugged into a properly grounded
electrical receptacle of the correct voltage, size, and plug
configuration. See the SPECIFICATIONS section for
details.
3. Move the adjustable tray to the proper height for the pan depth.
Raising the tray for 2-1/2" (64 mm) pans
a. Lift the tray using the tray adjustment handles.
b. Rest the handles on top of the handle brackets.
Lowering the tray for 4" (102 mm) pans
a. Lift the tray adjustment handles off of the handle brackets.
b. While holding the handles, lower the tray into place.
NOTE: Make sure the tray adjustment handles are in the vertical
position after moving the tray.
4. Place a dry pan in the well. The Induction Dry Well will not operate
without a pan inside the well contacting the glass surface.
5. Press the
button to turn on the unit.
• The control displays will illuminate to
show the current setting. The Induction
Dry Well operates by default in the
Temperature Level control method.
(Levels 1–5). See the "Changing the
Temperature Control Method" procedure to change to
Temperature Setting method.
NOTE: After initial startup, the unit will start up at the same
setting from when it was last shut down.
NOTE: The control displays will flash "PAN" when a pan is not
being heated or when no pan is on the glass surface.
The setting will remain solid when a pan is on the glass
surface and being heated.
6. Set the temperature level to level 3 (180°F/81°C) to preheat
the well for 10 minutes.
7. Replace the dry pan with a food pan.
8. Adjust the temperature level to the desired setting.

• Controlling the zones individually is recommended
only when using 1/2 size pans.
• It is recommended to use Sync Mode when using
1/3, 1/6, or 1/4 size pans. Refer to the "Sync Mode"
procedure in this section for more information.

c. Check food temperature regularly and make adjustments
to the temperature setting accordingly.

temperature settings.
