CREAM-BASED ICE CREAM
Ice cream is made up of milk, cream, sugar and often egg yolk and other
ingredients. It gains its creamy consistency through continual mixing while it
freezes.
Basic recipe vanilla ice cream
250 ml milk
300 ml cream
1 vanilla bean
pinch of salt
3 egg yolk
4 tbsp. sugar
Quick vanilla ice cream
125 ml milk
375 ml cream
1 egg
4 tbsp. sugar
1-2 packets Vanilla sugar
Basic recipe chocolate ice cream
½ block of dark chocolate
½ half block of milk chocolate
300 ml cream
70 ml milk
1 egg

Heat the milk and cream, scrape the
vanilla pod into the mixture, as well as
the salt. Combine the egg yolk with
sugar, and slowly pour in the warm
milk and cream mixture. Refrigerate
mixture 24 hrs. Just before starting the
cycle, fold in the egg. Place into canis-
ter and start cycle.
Combine all ingredients, place into
canister and start cycle.
Heat the chocolate and milk together
and refrigerate for 24 hrs. Just before
starting the cycle, fold in the egg. Place
into canister and start cycle.
