EXTRAORDINARY MAINTENANCE

5.1
PRELIMINARY SAFETY OPERATIONS
WARNING! Before carrying out any maintenance operation,
disconnect the power supply by switching off the switches installed
outside the oven and/or leavening compartment and wait for the
equipment to cool to room temperature.
Operations must only be carried out after the appliance has cooled
down.
The working area must be properly illuminated if used during the
night or if visibility is poor.
All maintenance operations and repairs must be carried out using
suitable accident prevention equipment, by specialised and
properly licensed technicians, approved by the manufacturer.
All precautions are to keep the appliance in a proper state, and
failure to observe them might result in severe damage that will not
be covered by the guarantee, and in unnecessary risks.
WARNING! Periodically, at least once a year, and every time a
malfunction occurs, have a specialist technician check the
appliance over to ensure it is working properly.
WARNING! Some operations, listed here below, need to be carried
out by at least two people.

5.2 GENERAL CLEANING

After carrying out the operations described in point 5.1 above, clean the
appliance as follows:
Regularly clean the appliance in general. After leaving it to cool down,
carefully remove, from internal and external parts, all residues that
might have collected during cooking, using a damp sponge or cloth and
a little soapy water, if necessary. Rinse and dry the areas, being sure to
wipe parts with satin finish in the direction of the finish.
WARNING! Carefully clean off regularly any fat or grease that
may have dripped during cooking as this is a potential fire hazard.
WARNING! Never clean the appliance with direct jets of water or
with pressurised water jets. Do not allow water or any cleansers
used to come into contact with electrical parts.
The use of toxic or harmful detergents is prohibited.
NOTE: Do not clean the tempered glass in doors while it is still hot.
Do not use solvents, detergents containing aggressive substances
(chlorides, acids, corrosives, abrasives, etc. ...) or equipment that
could damage surfaces. Before starting up the appliance again,
make sure that none of the cleaning equipment has been left inside.
5.3
BAKING CHAMBER PART REPLACEMENT
5.3.1
LAMP REPLACEMENT
The inside of the baking chamber has double lighting with special
halogen lamps on each side.
After carrying out the operations described in 5.1, the lamp for lighting
the baking chamber is replaced inside the baking chamber itself.
- Unscrew the metal plate protection (item C, fig.16) of the lamp
cover.
- Remove the cover with a screwdriver (item A, fig.16) and replace the
lamp (item B, fig.20) and/or cover.
- Refit the cover and tighten the metal plate protection.
5.3.2
CHANGING ELECTRICAL PANEL COMPONENTS
After carrying out the operations described in 5.1, to change electrical
panel components proceed as follows:
- Remove the side panel by unfastening the fixing screws.
- Disconnect the electrical connections to the component.
- Change the component.
- Perform the above operations in reverse order to reassemble, taking
care that you connect the component up correctly.
NOTE: If the electronic cards have to be replaced, perform a
general Reset of the appliance as described in point 5.6.

5.3.3
CHANGING THE FUSE
The electrical circuit is fitted with a fuse, which prevents the appliance
from starting and the LCD from lighting up if it blows. If this happens,
check the state of the fuse and replace, if necessary.
After carrying out the operations described in 5.1, proceed as follows:
- Remove the rear panel by unfastening the fixing screws.
- Remove the fuse (item A, fig. 17), check it and replace with a fuse
that has the same characteristics.
- Perform the above operations in reverse order to reassemble.
5.3.4
CHANGING THE THERMOCOUPLES
After carrying out the operations described in 5.1, to change the
thermocouple proceed as follows:
- Remove the rear panel by unfastening the fixing screws.
- Unfasten the thermocouple fixing nut (to do so, it may be necessary
to turn the electrical panel, loosening its fixing screws).
- Disconnect the two cables feeding the thermocouple.
- Replace the thermocouple.
- Perform the above operations in reverse order to reassemble, making
sure that the connectors are in the right positions.
- For correct temperature reading, always make sure that the
thermocouple bulb is in line with the inside of the chamber.
5.3.5
CHANGING THE GLASS
After carrying out the operations described in point 5.1, to change the
outside glass (item 38, Plate A) proceed as follows:
- with the door closed, remove the front fixing screws of the surround.
- remove the front surround, complete with outside glass.
- unscrew the nuts on the metal plate holding the outside glass.
- replace the outside glass and gasket.
- - perform the above operations in reverse order to reassemble.
5.3.6
CHANGING THE GLASS (INSIDE)
After carrying out the operations described in point 5.1, to change the
inside glass (item 38, Plate A), proceed as follows:
- with the door closed, carry out the operations described in 5.2.5;
- unfasten the nuts on the metal plate holding the inside glass.
- remove the metal plate.
- replace the inside glass and the gasket, removing it from the front.
- perform the above operations in reverse order to reassemble.
5.3.7
CHANGING THE DOOR SPRING
After carrying out the operations described in point 5.1, to change the
door spring, proceed as follows:
- Close the door.
- Remove the LH side panel by unfastening the fixing screws.
- Release the eyelet complete with spring.
- Unscrew the eyelets (item B, fig. 18) and replace the spring (item A,
fig. 18).
- Calibrate the spring tension by changing the position of the rear
eyelet along the adjustment scale (item C, fig 18).
- Perform the above operations in reverse order to reassemble.
5.3.8
CHANGING THE REFRACTORY BRICK SHELF
After carrying out the operations described in 5.1 above, to change the
refractory brick shelf, proceed as follows:
- Open the front door.
- Lift out the refractory brick shelf with the aid of a screwdriver.
- Replace the refractory brick shelf.
To replace the raised shelf in refractory brick (where fitted) use a
screwdriver of suitable length.
5.3.9
CHANGING THE SAFETY THERMOSTAT
WARNING! Regularly check that the safety thermostat is
operating correctly.
After carrying out the operations described in 5.1 above, to replace the
safety thermostat proceed as follows:
- Remove the RH side panel by unfastening the fixing screws.
