5.1
ORDINARY MAINTENANCE
For ordinary maintenance we intend all the operations that can be done by the operator only
after having read carefully the instructions given in this section.
5.1.1 CLEANING OF THE MACHINE
Cleaning of the machine must be carried out at the end of each use, in compliance with hygienic
standards and in order to protect the machine's functionality.
Using a suitable wooden spatula, first remove flour residues and then clean the machine and
in particular the surfaces of plates in contact with the dough using a soft sponge or a cloth
dampened with lukewarm soapy water.
Rinse until the detergent is completely removed.
Dry with absorbent paper for food use and then first clean the surfaces in contact with the
dough and then the whole machine with a soft, clean cloth dampened with specific disinfectant
for food machines.
If the machine is not to be used for a long period, wipe the surfaces of plates with a cloth
soaked in Vaseline oil to form a protective film over them
WARNING
Do not use chemical not alimentary product, abrasive or corrosive.
Do not use water jets to clean the machine.
Absolutely avoid using metal sponges and abrasive or sharp tools to avoid damaging the
surfaces.
