The letter "T" on the display inside the steam icon indicates that the
boiler has reached working temperature and that the steam is ready to
be emitted.
No dedicated button is provided for direct access to the "Steam"
function. If steam is used frequently it is suggested that this function be
assigned to the "HOTKEY" (see 3.3.1)
NOTE: It is not possible to emit steam if the boiler has not been
enabled and/or has not reached the correct temperature to produce
steam.
NOTE: It is only possible to fit a steamer if the oven doea not have
a raised rear cooking shelf.
FRONT HEAT COMPENSATION SETTING
The "front heat compensation" function makes it possible to avoid
temperature drops in the front part of the baking chamber due to the
escape of hot air when the door is opened. Compensation occurs via the
switching on of additional front heating elements, which are enabled by
the door opening.
To set the parameters for this function, scroll through the parameters on
the display with the "CURSOR" button until "EXTRAMENU" is
highlighted, then press "OK". In the screen that is displayed, select the
submenu "Front heat compensation", using the "+" and "-" buttons to
scroll through the list. Press "OK" to confirm your selection.
The

compensation": scroll through the list using the "+" and "-" buttons to
select the following items:

"Enable": to decide whether or not to use the front heat
compensation
-
"Ceiling compensation time": time during which the additional
ceiling heating element is active
-
"Floor compensation time": time during which the additional
floor heating element is active
-
"Ceiling power": expresses the % power to be applied to the
additional ceiling heating element
-
"Floor power": expresses the % power to be applied to the
additional floor heating element
For each of these items it is possible to make further choices, selected
using the "+" and "-" buttons and pressing "OK" to confirm.
To return to the previous screens, press the "RETURN" button one or
more times.
NOTE: The "Front heat compensation" function may have a
noticeable effect on baking quality, and its effectiveness varies
according to the type of product being cooked and the way the
equipment is used. It is recommended that you carry out a few
baking tests initially, to find the optimum settings.
NOTE: No dedicated button is provided for direct access to the

suggested that this function be assigned to the "HOTKEY" (see

NOTE: The "Front heat compensation" is not available in the
"Smart-Baking" mode.
COOKING TIMER SETTING
The "Cooking timer" indicates the time required for proper cooking,
from the moment the product is put into the oven.
To set the parameters for this function, scroll through the parameters on
the display with the "CURSOR" until "EXTRAMENU" is highlighted,
then press "OK". In the screen that is displayed, select the submenu
"Cooking timer", using the "+" and "-" buttons to scroll through the
list. Press "OK" to confirm your selection.
The display shows another submenu entitled "Cooking timer": use the
"+" and "-" buttons to adjust to the time required. Press "OK" to
confirm your selection.
To return to the previous screens, press the "RETURN" button one or
more times.
Once all selections have been made, an icon will be shown on the main
display indicating that the "Cooking timer" function has been activated
successfully (fig.34).
Once set, the timer operates in countdown mode once the items have
been placed in the oven, by pressing "OK".
NOTE: The cooking timer does not start until the wording "Load
oven and press OK" is displayed in the line of text with
explanatory messages.
At the end of the countdown, a buzzer will sound to inform the
operator that it is time to remove the items from the oven.
STAND BY SETTING
The "Stand By" function serves to keep the oven warm while reducing
power consumption; this is the ideal solution during short breaks in
cooking operations.
Energy is saved by piloting the switching on of the floor and ceiling
heating elements at factory-set levels which guarantee that the oven
does not reach an excessively low temperature.

To enable or disable the function, press the "STAND BY" button.
When it is enabled, a specific icon will be shown on the display
(fig.35).
NOTE: The "Stand By" function puts the appliance into a sort of
"waking sleep", and as such it must not be used while baking, as it
would result in unsatisfactory product quality.
3.2.2
STARTING THE BAKING CHAMBER IN PROGRAM
MODE
Using the oven in Program mode enables the operator to work
"automatically", i.e. to save and/or call up from the memory (internal
or external) a series of baking programs with pre-set parameters.
The fact that the appliance is in Program mode is confirmed by the
presence of any icon other than the "chef" (which indicates Manual
mode – see 3.2.1) and by the explanatory message shown on the
display (fig.36).
LOADING A PROGRAM
Using the "CURSOR", scroll through the display until the word
"EXTRAMENU" is highlighted. Press "OK" to confirm. In the screen
that appears on the display, use the "+" and "-" buttons to select this
item in the menu: "Programs". To confirm this choice, press "OK".
In the new screen "Programs" that is displayed, use the "+" and "-"
buttons to select the option "Load from internal memory" or "Load
from SD card". Press "OK" to confirm.
The first program (in numerical order) is displayed. To select the
program you require, scroll through the list using the "+" and "-"
buttons. Confirm your choice by pressing "OK".
The program will be loaded. Press "START/STOP" to run the heating-
up phase and proceed with cooking.
NOTE: During the cooking process, it is possible to edit the settings
in real time, following the procedure as described in paragraph
3.2.1. The explanatory text shown by the display will have an
asterisk to show that the oven is operating with an edited program.
The values that are changed will only be used for the cooking
operation in progress: the original program values will not be
changed.
NOTE: To load a program from an SD card, just insert the card
into the special opening on the right side of the baking chamber
module (item C-fig.19) and follow the steps described here above.
SAVING A PROGRAM
The oven's electronic memory is capable of storing a maximum of 60
programs. Further pre-set programs are available on request from an
external source (SD card).
To save a program (we recommend that, if present, you select a
program with an icon representing the product being baked), load the
program first (paragraph 3.2.2 – LOADING A PROGRAM).
Once the program has been selected (the icon will be shown on the
right side of the display), select "EXTRAMENU", "Programs". In the
screen that opens (fig.37) choose the submenu "View/Edit".
At this point, use the "+" and "-" buttons to scroll through the various
parameters shown on the right hand part of the display. Select a
parameter to change and press "OK" to confirm (the cursor will change
its direction"<").
Use the "+" and "-" buttons to change the value of the parameter and
press "OK" to confirm. Repeat this operation for all the parameters that
are to be changed.
The main parameters (fig.38) in a cooking program are:
- Cooking areas (two, four areas or Smart-Baking "SB")
- Front ceiling (front ceiling set point temperature)
- Rear ceiling (rear ceiling set point temperature)
- Front floor (front floor set point temperature)
- Rear floor (rear floor set point temperature)
- Cooking timer (cooking duration)
- Start valve (valve opening at the start of cooking)
- Valve time (time before passing to the final value)
- Final valve (valve opening after the "Valve time" is over)
- Steam 1 time (time after which there will be the first emission of
- steam)
- Steam 2 time (time after which there will be the second emission of
steam)
- Steam 3 time (time after which there will be the second emission of
- steam)
- Steam duration (the duration of a single steam emission)
- Program name (name associated to the program)
If a programme is set to Smart-Baking mode, the four temperature
parameters will be replaced as follows:
- Temperature (oven set point temperature)
- Ceiling power (ceiling power percentage)
- Floor power (floor power percentage)
To confirm the changes, press "RETURN" until you return to the
submenu "Programs". Then select the item "Save to internal memory"
