Eggplant Caviar
1 large eggplant

2 tbsp. olive oil

Roast the eggplant on the grill over a medium flame, turning occasionally until thoroughly cooked. This may take 30 minutes.
Remove from the grill and cool for handling. Strip off the skin and chop the eggplant finely. Add all the seasonings. Chill
thoroughly and serve on toast.

Stainless Steel
Always use the mildest cleaning procedure first, scrubbing in the direction of the grain.

Do not use steel wool as it will scratch the surface.

To touch up noticeable scratches in the stainless steel, sand very lightly with dry 100 grit emery paper in the direction of the

grain.
Specks of grease can gather on the surfaces of the stainless steel and bake on to the surface and give the appearance of

rust. To remove, use a mild abrasive pad in conjunction with a stainless steel cleaner.
Grill grate
For easier cleaning, scrub the grill grates immediately after cooking is completed and after turning off the flame. If the grill is
allowed to cool before cleaning, cleaning will be more difficult.
Dip a brass bristle barbecue brush in water and scrub the hot grill. Dip the brush frequently in the bowl of water. Steam, created
as water touches the hot grill, assists the cleaning process by softening any food particles.

Make sure that the gas supply and control knobs are turned off.

Make sure that the grates are cool before removing.

Grill burners
Extreme care should be taken when moving a burner as it must be correctly centered on the orifice before any attempt is made
to relight the grill. Frequency of cleaning will depend on how often you use the grill.
1. Before cleaning, make sure that the gas supply and control knobs are turned off and the grill is cool.
2. Clean the exterior of the burner with a wire brush.
3. Clear stubborn scale with a metal scraper.
4. Clear any clogged ports with a straightened paper clip. Never use a wooden toothpick as it may break off and clog the port.
Check if insects or other obstructions are blocking the flow of gas through the burner, and if so, call the customer service
line at 1-800-913-8999.
Grease tray
The grease tray should be periodically emptied, wiped down, and washed with a mild detergent and warm water solution.

A small amount of sand may be placed in the bottom of the grease tray to absorb the grease.

Check the grease tray frequently. Do not allow excess grease to accumulate and overfl ow out of the grease tray.

Checking for Spiders and Insects
Periodically check and clean the burner and venturi tubes for insects and insect nests. A clogged tube can lead to a fire beneath
the grill and is the most common cause of flashbacks.
To reduce the chance of a flashback, clean the burner tubes:
