Detailed description of a cycle and the electronic board settings
In the description below, the values in brackets refer to the adjustable settings shown in the default
settings table.
Add hot water (45°C) and flour. Add 50% of the working capacity as hot water and 50%
as flour.
Press the cycle start button to start the first mixing cycle. The mixing cycle comprises:
A stirring cycle at fast speed (P24) for X seconds (P8).

A stop cycle of X seconds (P9).

A stirring cycle at fast speed (P24) for X seconds (P10).

A stirring cycle at slow speed (P21) for X seconds (P11).

The Tradilevain buzzes and requests a scrape-down. Open the lid and use the spatula
supplied to scrape down the tank.
Press the cycle start button to start the second mixing cycle. The second mixing cycle is
identical to the first. If the mix is not satisfactory after this second cycle, press key 1 to
start another stirring cycle at fast speed (P24) for X seconds (P20).
Automatic switching to fermentation cycle and stirring cycle 1.
Fermentation cycle:
Sourdough starter fermentation phase,
the Tradilevain maintains the setpoint
temperature (P41) for a pre-programmed
time (P40).
Storage cycle:
The sourdough starter can be used from
this point on. Once the fermentation time
has elapsed, the Tradilevain switches
automatically to storage mode. The
cooling unit will then run until the selected
setpoint temperature (P42 or P43) has
been reached.
The Tradilevain buzzes every day at a set time (P39) for X seconds (P31) to request a
feed.

X times (P12) and at pre-programmed
intervals (P13).
Stirring cycle 2:
Stirring cycle 2 is done at fast speed
(P24) for X seconds (P17). It is repeated
X times (P15) and at pre-programmed
intervals (P16).
Stirring cycle 3:
Stirring cycle 3 is done at fast speed
(P24) for X seconds (P19). It is repeated
until the next feed and at pre-programmed
intervals (P18).
