WARNING!
Replace the oil/fat regularly because used oil/fat
may ignite even at normal frying temperatures. In
the event of a fire, pull the plug out immediately and
smother the flame with the lid or a cloth. Never try to
extinguish using water!
CAUTION!
Note the following instructions when using deep-fry-
ing fat to avoid health hazards:
Note the use-by date on the packaging. Never use the fat more
than 3-4 times, and filter the fat after each use.
Never use fat which has gone bad and never mix it with fresh fat.
Never mix different kinds of fat.
NOTICE
The following signs are indicative of fat which has gone bad:
Brown colouring
Emission of smoke when heated to 180°C
Increasing viscosity of fat when heated
Unpleasant smell/taste of the fat and of the food

7.2. Preparing food for cooking in fat

 Dry damp or wet food carefully.
 Cut the food into small pieces (around 3 cm long) as this will reduce the cooking
time and the food will absorb less fat.
 When frying potatoes, make sure that you do not cut them too small in order to
minimise the formation of acrylamide.
 Thaw frozen food prior to use.
 Add salt and seasoning to food after frying and never over the fondue set.
