Operating instructions
Safety instructions for operation,
cleaning and repairs
=
The appliance is only intended to be used for commercial cooking
applications. It should be operated and cleaned only by trained
personnel. Maintenance and repair work should only be carried
out by qualified personnel.
=
These instructions must be made known to the employees
concerned when they are trained in how to use the appliance.
- Fat and oil which have become overheated can ignite automatically.
The appliance must not be left unattended when in operation! Never
use water to extinguish fat and oil which have caught fire! Put on
the lid, switch off the heat and carefully withdraw the pan from the
hot cooking zone.
- Do not operate the cooking zones without cooking something. (only
for models without saucepan sensors)
- Do not place any aluminium foil or plastic on the cooking zone.
- Cooking zones and surfaces for keeping food warm on the glass
ceramic hob must not be used for depositing items.
- Be careful when working with additional appliances! The connection
cables must not come into contact with the hot cooking zones.
- The appliance must immediately be switched off if any cracks,
chinks or signs of breakage appear on the glass ceramic surface.
Disconnect the appliance from the mains at all poles. (Cut-off device
provided by customer, e.g. fuse switch-disconnector).
- Rough bases (e.g. pans made of cast iron or enamel with an
electrographite base) scratch the cooking surface when moved.
Avoid using pots and pans made of aluminium plate. When moved
on the hob, they leave traces on the glass ceramic which are
difficult to remove.
- Avoid hard objects from falling onto the hob. Impacts from a
concentrated load can cause the hob to break.
- The hob is resistant to temperature shocks (cold and heat) and has
also high mechanical resistance.
- Parts of the appliance or accessories that come into contact with
food must be thoroughly rinsed with drinking water after being
cleaned with cleaning agents.
- Do not spray the appliance with water, a jet of steam or high-
pressure cleaners! First switch off the appliance before cleaning the
surrounding area with water, a jet of steam or high-pressure
cleaners!
- The appliance must not be in operation during cleaning.
- Do not use any flammable liquids to clean the appliance.
- Repairs should only be carried out by suitably qualified staff.
- When carrying out repair work, all the poles of the appliance must
be free of voltage (cut-off device provided by customer, e.g. fuse
switch-disconnector).
- The noise level at the workplace is below 70 dB (A). This
specification is necessary due to certain national safety regulations.

Operating the cooking zones
Notes on the right types of saucepans
We recommend that you only use saucepans which the manufacturers
have specified as being suitable for glass ceramic hobs.
Use saucepans with a smooth and even base. Saucepans with rough
bases scratch the glass ceramic cooking surface when they are moved.
Saucepans or frying pans made of aluminium plate can leave traces
when they are moved over the surface. Stop using these saucepans.
To remove any rubbed-off aluminium, we recommend cleaning the
surface with O-Fix-C, cleaner and paper.
Select saucepans whose diameter matches that of the cooking zone.
Setting the cooking zones
The fast cooking zone is on the front left on all appliances.
To operate the cooking zone, set the respective
control knob 3 to the desired heating
performance between settings 1 and 3. The
pilot light 5 comes on.
Initial cooking at high output setting, continuous
cooking at lowest possible setting. The required
setting for continuous cooking depends on the
pan type and quantity of food to be cooked.
If the cooking zones are equipped with saucepan sensors, the
heat output selected is automatically switched on and off by
depositing or removing a metal saucepan.
To switch off the cooking zone, set the respective control knob to
