This kind of cooking is done keeping a costant
difference of temperature between the cooking
chamber and the core of the product. Since the
temperature in the cooking chamber is lower then
usual and the time to complete the cooking is longer
the roasts result more tender and juicy then ones
cooked in traditional way. In the same time the
meat shrinkage is reduced.
ΔT temperatures suggested:
40°C for red meat roasts (beef..), with a core
temperature set between 45°C and 55°C;
50°C for white meat roasts (veal..), with a core
temperature set between 75°C e 85°C.
COOKING PROGRAM STORAGE
It is possible to save a cooking process on the oven
internal memory.
The oven allows to store up to 99 programs.
To store a recipe please proceed as follows:
Press button T11;
Select with the knob M the first program available (
the flashing number), press M; the buzzer beeps.
On D3 display the phase to be memorized will start
flashing.
Select the cooking mode as for the manual cooking.
It's possible to memorize 3 cooking phases for each
single recipe. Press the knob M at the end of each
phase.
When you finish setting the 3 steps, press the T11
button and the display D3 shows the label "MEM".
To save a recipe with 1 or 2 steps press the button
T11 at the end of the phase, the D3 display shows
the label "MEM".
To save recipes, press the T11 button.
To exit from the recipe mode, press and hold the
"M" knob.
LOADING A STORED COOKING PROGRAM
To access a memorised program, press the T11 Book
key and select the program number by turning the
M knob to right or to left.
Confirm the selection by pressing the M knob.
Select phase 1 and press T13 Start key to start the
program.
It is also possible to start the cooking from a
differante phase then 1 by choosing the phase
number and press T13 Start key to start the program
from the selected phase.
MODIFICATION AND CANCELLING OF THE COOKING
PROGRAMS
To modify a stored program choose the program as
explained at the previous chapter (COOKING
PROGRAM STORAGE).
Modify the phase and press M
If it's necessary to modify more than one phase,
proceed as above
After finishing editing, press the T11 button on the
display D3, shows the label "MEM".
Press button T11;
It is possible to cancel the program partially or
completely
For the partially cancelation it's necessary to select
the phase you want to cancel and keep pressed the
T11 key.
To cancel the program completely, select the
program and keep pressed the T11 key.
13. WASHING (OPTIONAL)
Before starting a wash cycle, assemble the impeller
provided.
Remove eventually dishes in the oven chamber.
Remove grids and tray racks.
Remove the drain plug.
To start a cleaning cycle, proceed as follows:
When the oven is in standby mode (off), press the
"M" knob for 5 seconds;
D1 display shows the ECO label.
D3 display shows the CLN label.
Turn the "M" knob to select the desired cycle.
There are 3 washing cycles:
ECO WASHING - "ECO"
NORMAL WASHING - "NRM"
HARD WASHING - "HRD"
Press the T13 button to confirm and start the cycle.
D2 display shows the total time of the washing cycle.
If the oven chamber temperature is higher than 50 °
C, before starting the washing, the oven will perform
a cooling cycle (see "Cooling" section).
