General indications for cooking

Pizzas and other similar products, have times and temperatures for cooking which depend on the shape and thickness of
the dough, as well as the quantity and type of ingredients included.
For such reasons it is always recommended to carry out certain cooking tests beforehand, in order to understand the oven
features and operation better.
Indicatively the oven settings are as follows:
• Keep the vent valve closed until the oven reaches the set temperature;
• It is preferable to cook directly on the stones, in order to obtain the best result for the product;
• Set the power of the Top element to between 60 and 80%, never below 30%;
• Set the power of the Bottom between 0 and 30%, if cooking directly on the stones.
If after the oven will be used for more baking, increase the Top element to 90÷100% and the Bottom to 50% power.
• If cooking with a baking tray set the Top element to between 30 and 50%, and the Bottom between 60 and 80%.

Vent valve use

The vent valve enables the cooking chamber fumes and vapours to flow out whilst maintaining its heat.
It is recommended to keep the valve completely closed when the oven is heating up in order to reach the desired
temperature as quickly as possible. During cooking adjust the valve according to requirements.

Oven switch off

To switch the oven off follow the procedure below:
• Hold the "SWITCH ON/OFF" key pressed down for 1 s;
• Turn the general switch to the 0 position.

7 MAINTENANCE AND CLEANING

Safety precautions
Before any maintenance operation, take the following precautionary measures:
Make sure that the oven is switched off and completely cooled down;
Make sure that the oven is not connected to an electrical supply;
Make sure the power supply cannot be accidentally reactivated; remove the plug from the power socket;
Use the personal protection devices envisaged by Directive 89/391/EEC;
Do not use chemical agents on the refractory plates and the internal parts of the oven;
Do not use water jets or high pressure washing devices;
Do not use abrasive materials or sponges to clean the door windows and the metallic parts of the oven;
Do not clean the door window when it is hot;
Install all safety guards and re-activate all safety devices once maintenance or repairs have been completed
before putting the oven back into service.

Routine maintenance for users

Before performing any maintenance operations, disconnect from the power supply and follow the "Safety precautions".
To keep the oven always clean and efficient it is necessary to carry out cleaning and routine maintenance at
regular intervals as follows:
Daily cleaning
1. Clean the inside part of the cooking chamber using a metal spatula to remove flour deposits or other
cooking residues;
2. Clean the inside and outside of the door window with a damp cloth and a delicate detergent;
Do not use abrasive sponges.
3. Clean the external parts of the oven such as the doors, door handles and front control panel with a damp
cloth and delicate detergent.
