Operating Instructions

SMOKE BOX

• Ash grate and ash tray MUST be in place when using smoke box.
• Wood chunks or chips must be used in order to produce smoke and create the smoke flavor.
• Before using the custom smoke feature, open the smoke box door and fill with wood chunks or chips. Do not overfill.
Smoke box door must close completely for proper function. Never use wood pellets.
• You may use dry wood chunks or chips in your smoker.
• Check smoke box periodically to see if wood has burned down. Add chunks or chips as needed.
• Do not leave old ashes in the ash tray. Once ashes are cold, empty ash tray. Ash tray should be
cleaned out prior to and after each use to prevent ash buildup.
ADDING MORE WOOD DURING SMOKING PROCESS:
NOTE: Additional chunks or chips should not be added until any previously added chunks
or chips have ceased generating smoke.
• Open smoke box door.
• Place wood chunks or chips in smoke box and close door.
• Keep smoker door closed when adding wood chunks or chips.
• A flare up may occur when smoke box door is opened. If wood chunks or chips flare up, immediately close
smoke box door and wait for chunks or chips to burn down before opening door again. Do not spray with water.
• Ash tray will be HOT even if handle is not.
• Never use wood pellets
WATER BOWL
• Once smoker reaches desired temperature, add water or liquids such as apple or pineapple juice, to water bowl.
• You may also add slices of fruit, onions or fresh dried herbs to the water to add subtle flavors to your smoked food.
Tip: For chicken or other foods high in moisture, little or no liquid is needed.

CLEANING AND STORAGE

ALWAYS MAKE SURE SMOKER IS COOL TO THE TOUCH BEFORE CLEANING AND STORING.

• For rack supports, racks, water bowl and drip pan use a mild dish detergent. Rinse and dry thoroughly.
• Clean ash grate and ash tray frequently to remove ash build up, residue and dust.
• Dispose of cold ashes by placing them in aluminum foil, soaking with water and discarding in a
non-combustible container.

Do not use a cleaning agent and dry thoroughly.
• After cleaning, store smoker in a covered and dry area.
