Notes on stainless steel (risk of corrosion!)

● Please note! Even high-quality stainless steel can corrode if handled improperly. Salt, acids, chlo­
rine, iodine and food residues destroy the protective coating and can result in corrosion and pit­
ting, also with high-quality stainless steel!
● The stainless steel surface forms a new protective layer after damage, but only if air or oxygen-
rich water has time to react with the surface.
● If residues, e.g. lime, protein or starches are not completely removed, it prevents air or oxygen-
rich water from getting to the stainless steel surface. A protective coating cannot be formed and
this causes corrosion e.g. pitting damage, even on high-quality steel. Therefore, clean thoroughly
to prevent residues from sticking.

Remove residue from the frying process

. Drain the residue from cleaning into the collecting container. Whilst draining, use a brush and
thoroughly clean the waste pipe..
. Clean the drain plug and drain in the dishwasher or by hand with a grease-cutting cleaning agent.
. Remove dark spots on the surface with vinegar cleaner and stainless steel pan cleaner.
. Thoroughly rinse the frying area and waste pipe with water and rub dry.
. Apply food quality maintenance emulsion or edible oil to the frying area. Use a kitchen towel and
uniformly distribute the maintenance emulsion or edible oil.

CAUTION! Hot surfaces, hot liquids!
Risk of burning! Risk of scalding if the collecting container is filled with hot liquid! Risk
of burning if touching or hot liquids spill over!
. Do not fill the collecting container too high!
. Whilst draining, check the fill level!
. Wear waterproof protective gloves!
. Exercise appropriate caution!
. Turn off appliance and let it cool down.
. Place the collecting container below the drain.
. Insert the drain plug in the drain.
. Pour warm water into the roasting pan. Add
rinsing agent and vinegar cleaner and clean
with a cleaning brush or with a stainless steel
pan cleaner.
Release burnt-in food
. Briefly heat the cleaning solution or allow to
boil, thereby, release the burnt-in food using a
brush.
