Recipe for the double helices
put in bowl.
Add.
Dissolve yeast. Mix the flour with the liquid in the centre. Knead
the dough thoroughly until it is smooth and supple. If the dough is
too dry, add some water. Cover it and put in a warm place allow-
ing it to rise to double its size. Make one large loaf of bread or lots
of small rolls. Place on a baking paper and then on baking tray. Let
it rise again. Bake (bottom part of the oven at 220°C, 30 – 50 min.)
You can tell if the bread is baked by tapping on the bottom of it. If
it sounds hollow, it is ready.
Brush a bit of water on the hot bread.
Replace part of the water with milk (gives a darker crust).
Place the bread in a cool place before baking it.
Knead 100 –150 g of chopped walnuts / hazelnuts or 100 g of sun-
flower / pumpkin seeds into the prepared dough.
