BROWN BUTTER CREPES
Perfect for both sweet and savory
crepe dishes, this all-purpose
crepe has a rich, toasty flavor
thanks to lightly browned butter.

In a small saucepan, cook butter over medium heat, swirling it
occasionally, until melted and golden-brown, 2 to 4 minutes.
Immediately pour melted butter into a small bowl.

Blend the milk, eggs, and salt in a blender to combine. Add the flour
and blend until very smooth, about 20 seconds. (Alternatively, whisk
by hand and strain to remove any lumps.) Add the brown butter and
blend or whisk until combined.

Let batter rest for at least 5 minutes and up to 24 hours. (If resting for
more than 30 minutes, cover and refrigerate.)
